Happy Thursday all! Did I ever tell you all that I love leftovers and would seriously eat them like every single day if I could? It’s not just because there are less dishes and no cooking when you have leftovers. I am totally convinced that some foods taste even better the next day. When I first started working, I would cook up all of my meals for the week on Sunday for lunch and dinner so I could just grab my breakfast and/or lunch and go without putting any thought in it. I still do that for lunches now, but, I put half of them in the freezer so you all do not think I am crazy showing you the same food for like 5 days in a row…just like 2 or 3. Lucky for me, The Husband loves leftovers as much as I do….but, I think his motivation is all about less dishes LOL.
The one thing that’s awesome about making up Simply Filling Slow Cooker Oats is that you breakfast made for you all week long (see what I mean!). All you have to do is add a little water (maybe 1/4 cup), heat and serve with different toppings every single day.
Today was all about fresh berries, unsweetened coconut and brown sugar that melts just like syrup all over the oats….totally dessert in a bowl, but, better! (SF + 1 WPA) – 5 points+
Today’s lunch really has been the same all week long…..I love that Rosemary Chicken Salad and the way that the black grapes look like olives……

Best idea ever…I have actually been craving these little baggies of veggie tray veggies over chips with my sandwich each day. The prep was so much easier than cutting them up myself. We just bought the tray, portioned them out and each morning, I just grab and go.

On my drive home, I snacked on a banana with a Sargento Light String cheese since I knew we wouldn’t be having dinner with our friends until later. We all were craving hot soup so we ended up at Panera for You Pick Two.
I started off with French Onion Soup. It is totally worth it to me to use my WPA on their homemade buttery, sour dough croutons. You could skip them and the cheese to make this soup 100% Simply Filling. (2 WPA) – 5 points+
BBQ Chicken Salad without dressing and with BBQ sauce on the side for dressing.
(SF) – 4 points+
Picking an apple for your side would be the Simply Filling choice. Since I could pretty much tell myself that hot sour dough bread and whipped butter is a complete meal , I went with it today.

I am not a leftover fan at all. There are a few things that I can eat that are leftovers, but for the most part I can’t stand leftovers. I know people say that things taste better for the second time, but for me, it’s best when it first comes out of the oven or off of the stove. I would love to be able to cook all of my meals for the week on Sunday so that I don’t have to do it all week, but that just doesn’t work for me. Believe me, I wish it did. By the way, I am definitely going to try the oatmeal and chicken salad. They both look yummy!

Love leftovers and I also try to cook enough over the weekend to last the week, or at least most of it. So much easier in cooler weather when you can make bigs pots of soups, chilis, stews etc….

It depends on what it is. Some things do taste better the next day other stuff, no. Also I don’t like eating leftovers over 2 days old.

When my daughter complains about having leftovers. I tell her leftovers are a blessing, that we have plenty to eat. Of course, she rolls her eyes at me. She’ll learn one day. 🙂

Love leftovers! And so does my family. I agree, thinking most things taste even better left over. We are big fans of your steel cut oats – but I need to try unsweetened coconut (never have!).

Some leftovers I can handle, but others squick me out and I refuse to eat them. I have the app StillTasty though and it’s helped out a lot on whether I eat a leftover or use them to make something else for the day or night. I did make up some meals to freeze and knowing that it’s frozen the day it’s made really helps with my aversion a lot as well. I’m working on my love for leftovers!
