Dos Madres & My Weekly Menu

Happy Mom’s Day everyone! I knew today might be a higher points+ day so I decided to start with fruit to get in some of my healthy checks.

On our way out of town, I made sure to stop for my NEW LOVE.

Grande Coconut Dirty Latte (FF Latte + 1 pump coconut & 1 pump mocha) (4 points+)

After walking around the antique fair, we headed over to Dos Coyotes to meet up for Mom’s Day Meal #1.  I have to admit I was pretty excited when my Mom picked Dos because it is one of my FAVORITE Mexican Food places.

I had a few of the chips, guacamole and salsa….. (4 points+)

We are totally a family of salsas and trying them all Open-mouthed smile

I ALWAYS get the same thing at Dos because it’s THAT good.  Are you surprised it’s not chicken tacos?!

Yucatan Chicken Salad
Charbroiled chicken breast on green leaf lettuce, red onion, carrot, sweet peppers, cabbage & corn in Southwest vinaigrette served on a flour tortilla with fruit salsa and chipotle cream.

I managed to actually eat all of the salad with only a couple of bites of the tortilla (14 points+) I am pretty sure I got my 5 a day all in this salad.

My salad kept me full ALL afternoon long so no snacks were needed. I actually was really hoping I got hungry so I could have some of TJ’s Snack Mix that I made to give to my mom yesterday.   I resisted but got my mom to try some of hers.

Mother’s Day meal #2 for The Husband’s mom involved us cooking two of his favorite recipes together. 

He makes it so fun when he cooks with me and claims he is the BEST Sous Chef around.

Super Cheesy Mini Meatloaves (a.k.a. Burgers without a Bun) ~ I LOVE these every single time we make them. (7 points+)

1/2 cup of the easiest & tastiest Potato Salad you will ever eat ~ 3 points+

All rounded out with a simple side salad topped with 1 tsp Wish Bone Super Berry Vinaigrette (0 points+)

The Husband picked out a Strawberry Shortcake at the store for dessert.  I honestly didn’t NEED any, but, my mouth wanted the sweetness so I had a small piece. (4 points+)

HERE IS WHAT IS ON THE MENU THIS WEEK

I am working on “shopping” from our fridge/freezer & using what we have on hand this week! OH & I also bought the Sam’s Club 1 LB of salad so lots of mixed greens!

* Cobb Salad

* Shrimp & Chickpea Salad

* Pizza & Salad

* Southwestern Turkey Taco Salad

* TJ’s Nachos or Tacos!

Other ideas: Healthified Chicken Fried Steak, Turkey, Cheese & Pesto Won Ton Ravioli’s with tomato basil sauce & salad, Clean Eating Collard Greens with Spicy Shrimp and Turkey Sausage, French Dip Sandwiches, 9 points+ & Made with BEER, Sopitas de Tortilla

* BREAKFASTS ~ Taco Muffin Cups

* LUNCHES ~ Spicy Hummus Wraps

    Having your crock pot tortilla soup tonight because I tried your baked enchilada casserole on Cinco de Mayo and my daughter was disappointed that I didn’t make the soup so we will eat it on Nueve de Mayo!

    Love all your eats – that’s my favorite thing too at Mexican restaurants is to try all the salsas 😀

    I have a tofu quinoa dish and poblano rice new on my menu this week – hope you have a great Monday!
