Happy Monday all! Today was a fantastic Monday if you had the day off like me and probably just an OK Monday if you didn’t lol.
To celebrate the occasion, I made us this tasty, 2 point bacon & eggs breakfast. I love, love, love this 1 point real deal bacon.I also made a coffee run – Tall nonfat cappuccino with caramel on the foam (2 sp).
I had originally planned to go hiking along the coast with my friend but the rain over the weekend made us leery of the muddy trails.
To make up for it, I did a double workout. A 37 minute walk on the treadmill plus Jillian Michael’s Body Revolution workout #1. I forgot how hard her workouts are!
Fun fact: I “checked” it out on Hoopla for free and played it on our TV using our Google Chromecast.
Post workout, I had leftover potsticker soup. I kept my recipe simple this time using asparagus, mushrooms, onion, cilantro and Trader Joe’s Mini Cilantro Chicken Potstickers. (10 Potstickers for 3 sp).Plus 1/2 cup zero point edamame on the side for protein staying power.
The Husband requested Dino Tacos for dinner tonight and Taco salad tomorrow. I whipped up a batch of Turkey Taco filling to use for both nights.
He also took over our table so I made a small corner to snap my picture.
