Happy Monday all! Today was a fantastic Monday if you had the day off like me and probably just an OK Monday if you didn’t lol.
To celebrate the occasion, I made us this tasty, 2 point bacon & eggs breakfast. I love, love, love this 1 point real deal bacon.I also made a coffee run – Tall nonfat cappuccino with caramel on the foam (2 sp).I had originally planned to go hiking along the coast with my friend but the rain over the weekend made us leery of the muddy trails.
To make up for it, I did a double workout. A 37 minute walk on the treadmill plus Jillian Michael’s Body Revolution workout #1. I forgot how hard her workouts are!
Fun fact: I “checked” it out on Hoopla for free and played it on our TV using our Google Chromecast.
Post workout, I had leftover potsticker soup. I kept my recipe simple this time using asparagus, mushrooms, onion, cilantro and Trader Joe’s Mini Cilantro Chicken Potstickers. (10 Potstickers for 3 sp).Plus 1/2 cup zero point edamame on the side for protein staying power.The Husband requested Dino Tacos for dinner tonight and Taco salad tomorrow. I whipped up a batch of Turkey Taco filling to use for both nights.He also took over our table so I made a small corner to snap my picture.
I had 3 crunchy tacos (1/2 cup turkey taco meat, 1/2 oz 2% sharp cheddar, hot sauce, lettuce, tomato, 3 Trader Joe’s Crunchy Shells with 1/3 cup fat free salsa refried beans 10 sp17 Daily WWFreestyle Smartpoints, 12K steps
