Fast, Fresh, Healthy

Do you ever crave pancakes?  How about Protein Pancakes?  Or maybe Blueberry Pancakes with Fresh Blueberry Sauce?  For me, it’s ALL of the above!

This morning I tried a new trick but I am not sure if it worked or not ~ I added a splash of Maple Syrup to my pancake batter pre-cooking, but, then, I forgot and poured Maple Syrup over the top anyway 😀 Oops….Maybe I need a Do-Over!

I also remembered my re-usable cup for my Venti Iced Decaf Latte with Caramel Drizzle (3 pts).

I had planned on using this Jalapeño Cheddar Roll I picked up at Whole Foods yesterday for lunch, but, I couldn’t wait.  Topped with a melted Babybel Cheese (3 pts)!

I am not sure what my issue is but ALL week I cannot seem to stay inside or at my desk.   I was excited for my lunch, but, easily swayed at the opportunity to eat outside in the sunshine!

Ummmm, ya, we ended up at TR2 again for Tacoliciousness!!!

I just can’t get enough of their Spicy Chicken Tacos that are topped with GUACAMOLE & HOT SAUCE?!

The COOLEST part is that next time they said they would share their secret of how to make that chicken!!!!  You will be shocked at how it starts – I can’t wait to re-create it.  I had two tacos 8 pts plus a few chips with salsa (3 pts)

I think I have convinced several people in our office that HEALTHY BANANA SUNDAES are better than Ice cream.  Our R&D guy even told me they have the BIG Cuisinart I can use to make it over my Mini Chopper 😀

When I got home, I couldn’t wait to open our CheriBundi.  I picked the original with 50 cherries!  That’s a lot of cherries – can you imagine making up some juicer recipe that has 50 cherries in it?

Whenever I drink juice it’s important that it’s 100% juice and that it isn’t made up of a bunch of added sugars. I liked the stats and ingredient list!

I whipped up a quick spritzer to enjoy with dinner.  I actually liked the flavor of CheriBundi – it reminds me of the inside of Cherry Pie.  The Husband says it tastes like a Home Run Pie which I’ve never had, but, that might help 🙂

It’s pretty strong so I am not sure if you could drink a bunch of it at a time – that could be a good thing though.

Dinner tonight was FAST, FRESH and HEALTHY thanks to Cooking Light! 

Roasted Chicken & Butterfly Pasta Salad

I measured out 8 oz of Barilla Multi-Grain Butterfly Pasta on my FAVORITE SCALE!

I used an organic orange and a beautiful Meyer Lemon from my Grandmas tree.

I decided to use this Trader Joe’s Garlic Aioli Mustard instead of Stone-Ground Mustard.

This mustard rocks because it has a subtle garlic flavor (like garlic bread) with a slight dijon mustard taste.

Whisk together your dressing while your chicken and pasta cook.

I roasted my chicken like I did the other day, sans the fresh herbs because I was too lazy to pick them in the sudden rain that appeared..

I roasted the walnut for 3 minutes with the chicken and chopped everything up in one bowl.

Add the pasta and dressing.

I started off with a layer of organic romaine.

Then, added 1 cup of pasta, extra chives, walnuts and organic cherry tomatoes.

Absolutely delicious!  The WALNUTS really stand out when roasted and make this dish rich in flavor.  I LOVED the crunch and sweetness of the grapes.  We both gave this recipe 4 out of 5 stars so it’s a definite keeper.

I have a feeling I am going over in my points tonight thought because The Husband just brought out CHOCLOVE…..Must resist, can’t resist…..good thing for those extra Weekly Points Allowances!

    I always crave pancakes! I usually make protein pancakes at home but sometimes you just have to order them out. When I make them I like to add maple extract to the batter. Love my maple!

    Oh and your pasta dinner looks fantastic!

    1) I LOVE that mustard! i have it in my fridge nad use it everyday!

    Hiya K,

    It was a pretty tasty day if I do say so myself. I actually think that mustard would be really good on artichokes – it’s creamy and super delicious! I think it’s great any way you’d like to use mustard and it’s cheap enough to buy and try.

    Every day I read your blog and I get the BIGGEST craving for an iced coffee from Starbucks. It’s torturous because there actually isn’t a Starbucks really close to my work (weird, huh?)

    Also, you’ve inspired me to pick up a bunch of bananas this weekend just for freezing to make banana sundaes. They look so divine!

    Great post. I LOVE your re-usable Starbucks cup and even better you make it yourself…all those drinks add up! Also, I LOVEEEEEEEEEEEEEE the tacos…everytime I see that you eat there I get a little excited…as if I just there too. haha We have a place called Taco Rosa (don’t think it is up north) that has similar tacos…mmm! Oh, and I thought of you yesterday…I went to the farm to pick up fruit and of course bought their salsa and chips and couldn’t evne wait until I got to the car to eat them (not that you would do that just more the fact we both LOVE chips and salsa!) haha mmmm…then I gave it away to my brother – would have eaten the entire bag…oops. have a good weekend!
