Happy Hump Day all! Today has been such a fun day. There is nothing like having lunch with two of your favorite friends to make any day fly by. Oh there is that and then there is ice cream…..But, wait, I am getting ahead of myself. 🙂
I have really been digging starting my day with a big bowl of fruit. This morning I sliced up one of my white freckled (meaning sweet!) nectarines and a pluot.
No I didn’t top my muffin with the fruit this time. Instead I enjoyed my last Orowheat Double Fiber English muffin topped with 1 melty Tbsp of The Bees Knees ( my favorite!)
My fantastic 4 Weight Watcher Point breakfast did a great job at keeping me full all morning. Normally my running bunny cup motivates me to run, but, today, it just made me happy…corny, I know, but, whatever works, right?!
It took us awhile to decide where to go for lunch because we were torn between Italian at Mamarella’s or Mexican at TR2 ~ Chips and salsa won! I honestly think there is just something about chatting it up with your girlfriends and being able to chomp, chomp away on chips and salsa.
We dined al fresco (I think that means outside, right?) and started off with a big bowl of hot, homemade chips. Oh how I WISH we could’ve had margaritas too!
I absolutely LOVE their salsa. It is fire roasted with just a hint of spice. I think they could definitely heat it up, but, I LOVED it as is too.
I was doing a great job working my portion control until the homemade guacamole with roasted poblano peppers came out. So good ~ I LOVE anything with AVOCADO! We pondered using our forks to eat this straight up 🙂 LOL
I kinda have a thing for tacos if you haven’t noticed. I really think they are my favorite Mexican food aside from quesadillas, chips/salsa, fajitas…..LOL. I ordered 2 tacos Mexican Style. Mexican style means they are served with cabbage, red onion, cilantro, cojito cheese, hot sauce and AVOCADO.
I ordered one shrimp which came on a homemade flour tortilla. They grilled their shrimp up in a garlic lime sauce before serving it Mexican style. It was FANTASTIC!
My other taco was chicken on a corn tortilla. It was pretty tasty too. I topped both my tacos with extra salsa and of course guacamole. I did have a few bites of the rice and dipped a couple of chips in the beans. It’s a really good thing I had only had 4 Weight Watcher points all day!
My friends are funny because they wanted their pictures taken too! So I present to you two more tacos a la cart (the way I meant to order mine – oops!) and the burrito log :D Both looked really good and they enjoyed them.
We sort of started this little summer ritual in our office where one of us rotates buying ice cream each week and everyone can enjoy. I’ve been doing a good job at resisting, but, today I couldn’t pass up the “snack size” Haagen Daaz Chocolate Toffee Almond with coffee ice cream. Isn’t it cute? Sadly this little guy still costs you 190 calories and 13 grams of fat. It is 5 Weight Watcher Points but pretty tasty. I LOVE how they make the chocolate super thick and crunchy – yum!
I am pretty sure I will not need dinner tonight since I am still not hungry. I am thinking if anything I might cut up our watermelon and have that. I’ll keep you posted though because I know I have to cook for The Husband either way.
So ~ here is a question I was thinking about this morning as I made breakfast. When you all use a knife or spoon to spread your peanut butter, do you lick the knife clean or just put it in the sink? I’ll confess ~ no nut butter should ever be wasted and my knife might actually be cleaner than when I started 🙂

Ahhhh Mexican food is my favorite so I’m drooling right now! Of course I lick my knife clean before sticking it in the dishwasher. That way I get off all the food so I don’t have to rinse it off first, right? 😉

Wow, that guac looks fantastic! So do the tacos, mmmm. Hehe, I totally lick the knife! And I keep my pb on the spoon when I eat oats or greek yogurt, and I make sure that every last bit of the pb is eaten at the end. When I make my mom breakfast, she’ll sometimes leave traces of pb on her spoon. I don’t understand how you could do that! 😉
