Finger lickin’ good

Happy Monday all!  This morning I really wanted to have eggs with my chili lime tortillas when I remembered Taco Egg Muffins ~ 2 for 5 points+…….MMMM, I am pretty sure I could never get tired of these.

Organic Berries…..and for those wondering, my Blueberries were firm ‘Winking smile LOL

5 Points+ and served with coconut coffee to get my coconut dirty latte fix.

I wasn’t sure if I was really hungry today because I was genuinely hungry or because I knew I had a super delicious lunch lined up.  I couldn’t wait to dig into this gooey cheesy goodness.

Super Cheesy Butternut Squash Mac & Cheese (11 points+)

I took last night’s salad and topped it with 1 Tbsp of Dried Organic Cranerries & 1 Tbsp Toasted Almond Slices.  As much as I LOVE toasted almonds, I think toasted walnuts are better with this combination.  Topped with 2 Tbsp TJ’s Spicy Peanut Dressing (4 points+)

Dessert = Organic Cherries and they tasted just like cherry season cherries!

Big lunches that involve lots of crunch and cheesy pasta make me happy!

Mid afternoon I honestly wasn’t hungry but my mouth wanted something sweet.  I should just say, I really had to resist hopping in my car to go get an Iced Coconut Dirty Latte.

12 Guittard Milk Chocolate Chips (2 points+) worked to give me my fix

when I paired them with coffee!  I slowly let each one melt on my tongue and that is the ONLY way they are satisfying for me.  I could eat them all in one bite, but, then, I’d be left wanting more.

Did you all know that Trader Joe’s now sells Kale in big bags?!

I know I could easily shred my own kale, but, it is awesome that I do not have to go to another store any time I want kale now.

I decided to use half the bag to make Parmesan Kale Chips.  I pulled out as many stems as I could and used Nonstick Spray instead of Olive Oil to save on points+.

The entire pan is 1 points+ for the 1 Tbsp of parmesan I used.

I LOVE Big MOUNDS of “Chips”…especially when you get the parmesan crispies.  I will say that I think the TJ’s Kale tastes more Kale-like vs chip like and I actually didn’t mind the soft stems when I came across them.

Served with 1/2 cup of my Healthier Potato Salad.  Is it funny to say I honestly ONLY like the potato salad I make?  I do not like store bought and others always contain such a mayo-like taste.

BBQ Chicken Legs are one of my FAVORITE things in life.  I am not sure if it’s because you get to lick your fingers and get it all over your face or if it’s because they really are finger licking good.  I LOVE them and went back for another (5 points+)

Served with Summer Tea ~ I am so ready for all sunshine all the time!

P.S. I totally held the camera hostage by sitting on it so The Husband couldn’t snap my picture with BBQ sauce all over my face Open-mouthed smile  He was totally laughing at me and offering a napkin to trade for the camera….I figured, I knew where the roll of paper towels were so no bartering was needed Winking smile

What is one thing you are looking forward to most this summer?

I am looking forward to unlimited amount of trips to as many farmer’s markets as I can go to, all the delicious fruits/veggies (not oranges/apples/pears!) and BBQ’s.

    I am officially dying to try this new coconut syrup now! Have you tried their new light mocha coconut frappuccino yet? I’ve heard they are amazing!

    Let’s see, this summer I am really looking forward to lots of good grilled phone, especially corn on the cob! Also looking forward to moving my workouts outside in the sunshine!

    This summer I’m looking forward to a trip to the Outer Banks… I’m using the count down (46 days!) to help motivate me towards losing the next 5 pounds. Bikini shopping has also been a kick in the butt to go work out!

    You found cherries??? I’m SOOOO jealous, we’re a couple of months away from cherry season around here. This summer? Looking forward to sunshine (which has been sadly lacking this winter), not having to wear jackets, and sitting on my deck with my husband and a glass of wine. Have a great day Danica!
