Happy Wednesday all! Said with my best Italian Pepper accent lol. I love that you all go crazy for….chocolate+peanut, pickling/canning and always want to know the recipe for The Husband’s “Secret Sauce”. Thanks for cracking me up with all your comments on Monday’s post. I am back today with a few more food highlights from this week.
All week long I have woke up knowing exactly what I want for Breakfast and it goes something like this (be shocked ~ it’s not a healthy eggroll!)
Kodiak Cakes ~ topped with melted whipped butter and pure maple syrup…..
Bacon! Not just any bacon but Trader Joe’s peppered Turkey Bacon
Served up with Green Mountain Island Coconut Coffee of course!

This week is such a fun week with all the celebrations going on, but, it’s definitely a food challenge. My strategy is to focus on drinking a lot of water at each event before I take a bite of anything (breads, etc.) and to find a healthy choice on the menu to stick with it.
The first celebration started with a group of my co-workers who work at the winery heading out to celebrate surviving year-end and the audit!
The destination ~ Catelli’s (another place I can check off my Diner’s Drive-Inns & Dives list!)
They bring out baskets of homemade hot sour dough bread with this amazing garlic sun dried tomato butter.
But, my all time favorite thing there ~ Homemade Burrata on grilled bread with arugula salad. The burrata is a triple cream fresh mozzarella that is drizzled with a little sea salt, black pepper and olive oil. You spread it on the bread with the peppery arugula ~ Amazing!
It comes with prosciutto but as you all know, I pass on the funky meats (unless it’s crispy bacon!)
Pretty much as amazing as it sounds! I could probably have this as my meal and not share with anyone 6 points+
My newest addiction ~ These friggitello peppers roasted in olive oil, sea salt and freshly ground black pepper with just a squeeze of Meyer lemon juice before they are served.
I am totally the girl at the table who ate almost all the peppers ~ I promise they are sweet, not spicy.
Hands down the best Kale Salad I’ve ever had in my life. The best part is they Chef shared her recipe online ~ I am totally recreating this salad with my next batch of Kale!
Organic Kale, Meyer Lemon, Walnuts, Blood Oranges, Parmesan, Croutons, Olive Oil, Salt & Pepper ~ I added grilled organic pesto chicken to the top for staying power. 10 points+
The Husband has been asking for sliders ever since we had our slider party a few weeks back.
I love sliders because they are MINI which makes them fun to eat, but, also because they take less than 20 minutes to make, grill and serve.
Served up with spicy mustard, greens, tomatoes and Wickles. 5 points+
For our side, we dove into the box of chip goodness that the folks over at the Better Chip company sent us. Any guesses on which flavor I picked?!
Spinach & Kale of course! I love their chips because they actually use real veggies and put them inside the chip. I also dig that they are completely non-GMO, gluten free, all natural and made with REAL ingredients.
4 points+ a serving…
These totally taste like Kale Chips with a corny kick. I will be the first to tell you that you have to like Kale Chips to like these. 1/2 a serving for 2 points+

I am obsessed with all produce that is in season. I’ve been following the local harvest calendars and snatching up anything and everything that looks good. First it was strawberries, then blueberries, now it’s peaches and zucchini.
I love Wickles! I need to find those Better Chips here, all those flavors look amazing!

those peppers looks amazing!!! Now i want to eat peppers and it’s 9am! haha! The burgers look good too!
Mushrooms! I have been using them in everything! Also, I have had the Better Chips before. They have the Red Pepper ones at a place I go to. I like them, but I have a really hard time justifying them for the points. I am all about quantity. And for 4 points, I feel like I could have a lot of a different kind of chip. But they are good!
Trader Joe’s can’t open soon enough for me! You know that bacon will be on my list! Love that the salad recipe is on WebMD, I get a recipe e-mail from them every day…lots of great, healthy ones can be found on their site! LOVE love love thjose red pepper chips…I am able to find the big bags at Publix and they are terrific when you need a healthy crunch…still have yet to try kale…but you know it’s on my list!!
