Fun to eat

Happy Monday day all! If you could pick one thing you loved about your day, what would it be? For me, I think it would be the Shrimp Salad I had for dinner.

This morning I woke up craving…. flapjacks! You know you thought I was going to say eggs lol. 2 Kodiak Cakes topped with 1/2 Tbsp Land O Lakes Whipped Butter, 1 Tbsp pure maple syrup and a sprinkle of unsweetened coconut (8 Smartpoints).

My mid morning was a grande iced Nonfat Latte with caramel on top (3 Smartpoints).

Lunch was a new to me Japanese restaurant that was super delicious, just ok and weird all in one.

Since I needed instant gratification and I was starving, we ordered Edamame. I had about 1/2 this dish for 1 Smartpoints.

My “soup & salad”. The Miss soup was absolutely delicious but I have to say I always wonder why it’s 2 Smartpoints a cup.

The “salad” was weird – pickled carrots, radish & some green “stuff” that I’m not sure what it was. The noodles & cucumber were refreshing but I gave that hunk of crab & seaweed pile in the other bowl away.

We shared this super amazing Teriyaki Chicken & Meatball rice bowl. The sauce was made with red wine which perfectly balanced the sweetness.

My sharing plate (it’s a small appetizer plate). I had this and then went back for more chicken & rice. (12 Smartpoints)

There were two sushi rolls ordered that I thought I’d love more than the above but I have to say they were just ok. I had a piece of each to try them but decided it wasn’t worth it so stopped there.

I balanced out my day with this No Cook Crunchy Lime & Mango Shrimp Salad. It’s so good you all have to try it! Sweet, crunchy, tangy, a little spicy but fun to eat.

Anyone want the recipe???

Check out the “salad” aka all the crunch & herbs chopped up.

Protein power – cooked shrimp tossed in a simple lime vinaigrette.

All tossed together with the extra crunch of sea salt & like peanuts.

I started with 1 cup then went back for seconds because 2 cups = 4 Smartpoints.

31 Daily Smartpoints, 7K+ steps with a little walking at lunch.
