Good Eats!

HAPPY WEEKEND ALL!!  Thanks for the comments and emails on the 1 points+ Meyer Lemon Cookies ~ they are easy, tasty and just plain lemony good!  I enjoyed taking the night off too!  I have a little bit of catching up to do with you all so let’s get started.

I haven’t done too much cooking the past few days, but, when you have food this good, why cook?! Winking smile I know, I know…..it’s been fun seeing my family and friends plus it’s been a nice break too….

 

FRIDAY

All I had on my brain that I wanted for breakfast involved eggs, but, we had none.  I pondered and pondered before I realized that we had leftover Blueberry Coffee Cake.  I reheated mine in the toaster oven and it made the top all crunchy and crispy again. (6 points+)

Completely delicious with coffee ~ do you think that is why they call it “Coffee” Cake?

Mid morning I was hungry but I didn’t want to ruin my appetite since I knew I had a fantastic lunch planned.  I snacked on a Trader Joe’s Lite String cheese for 1 points+.

My BIG LUNCH DATE was meeting TJ of TJ’s Test Kitchen for lunch at one of my favorite places.  We both agreed a GOOD BLTA was in order so we headed over to Joy of Eating.

Thanks to TJ for arriving early and snapping pictures.

I subbed out my fries for a side salad with Italian dressing on the side (2 points+)

Then, I LOVED seeing how happy the BLTA made TJ!  Seriously ~ The Joy of Eating makes the BEST BLTA I’ve ever had….it’s their homemade sweet Hawaiian bread and thick freshly cooked bacon that makes it.

She also brought me gifts…..not just any Won Ton Wrappers……

You get 10 of these for only 3 points+!!!!  I cannot wait to do some more “wrapping” LOL.

When The Husband got home, we headed out for “Date Night” to Mary’s Pizza Shack.  I LOVE going to Mary’s Pizza Shack because they have the BEST salads.

I started with their small salad and my dressing on the side using my fork to dip with each bite. (3 points+)

I decided it was really worth it to me to have a small slice of these Mozzarella Garlic Bread too.  I usually resist the bread. (4 points+)

The Husband actually ordered two entrees to share.  What that usually means is that I get my small portions and he eats the rest Smile

Spaghetti with one a HUGE Meatball (his FAVORITE dish there!)

Tortellini tossed with Pesto and Marinara (My FAVORITE dish there!)

I portioned out about a 1/2 cup of pasta and 1/4 of the meatball (5 points+ estimate)

Plus a little of each tortellini (5 points+ estimate)

After the movie we headed out to see The Adjustment Bureau ~ It was really good and intense.  I honestly thin every movie I’ve ever seen with Matt Damon is GOOD.

SATURDAY

I finally got my Egg-Wich fix today.  We have been out of eggs for like 3 days and all I’ve wanted is THIS sandwich.

I joked with you all on Facebook and Twitter because the WHOLE TIME I was cooking our sandwiches I was singing ~ “Tonight, I celebrate my love for you….” and The Husband was all “Yeah, Egg Sandwiches!!!”  We probably NEED to get our more Winking smile

2 slices of Trader Joe’s FF Multi-Grain Bread (3 points+)

* 1 “fried” egg (2 points+)

* 1 tsp Whipped Butter (1 point+)

After breakfast we ran a few errands before stopping at Starbuck’s as we headed out of town.  For some reason, I didn’t think I could GO BIG, so I went with just a Grande Dirty Latte (Iced, nonfat, decaf latte with 1 pump mocha) (3 points+)

The first stop on our agenda today ~ Jack’s Urban Eats for HUGE Buffalo Chicken Salads!

BIG SALADS make the world a better place ~ especially when they taste like this.

Here is what is in the mix ~ My salad came up to 14 points+ and I’d totally eat it all over again!

* Mixed Greens

* Pickled Red Onions

* 1 Tbsp Cranberries

* 1 Tbsp Honey Walnuts

* 1 Tbsp Kidney-Garbanzo Beans

* Shredded carrots

* GRAPES!

* Buffalo Chicken Strips

* 2 Tbsp Homemade Balsamic Vinaigrette

After lunch we headed over to my Nephew’s Baby Shower….Can you all believe I am now officially a GREAT AUNT?!  It’s so cool and so weird all at the same time because well my nephew although in his mid-twenties is still my little nephew lol.

My Sister is CRAZY ~ She made this Elephant Cake herself!!!

Plus this AMAZING Broccoli Salad that has sunflower seeds, POM-Craisins and Poppyseed dressing. (6 points per 1/2 cup)

Not low in fat at all, but, I totally plan to re-create using Annie’s NEW Lite PoppySeed dressing to see if I can make it the same but lighter.

Being the good sis I am, I HAD to taste her cake especially when I knew she used fresh raspberry whipped cream filling.  I had 4 bites of the middle and gave the rest to The Husband (4 points+ estimate).

HERE IS MY GREAT NEPHEW ~ Isn’t he a the CUTEST little guy?! I LOVE him!

I am still pretty full so I am not sure that there is any dinner in order….maybe some cereal or just some fruit since I haven’t had any the past two days!

MOVIE TIME ~ Tonight we are watching Life As We Know It ~ Totally fitting for the baby theme of the day LOL.

    When you eat out, what are your tricks for estimating serving sizes? When I go out, I get so caught up in trying to figure that out, that I don’t feel that I enjoy my meal.

    I love the baby shower cake!! Your sister did a great job and the photo of the slice looked so yummy! Kudos to you for exercising self control with so much going on all weekend…just wish your restaurants were not so far from NY ;0)

    Just one burning question… how do you make your “fried” eggs for your eggwiches – i cannot seem to find it and was hoping to find a faster way to make eggs in the morning…thanks

    I can’t wait to try those lemon cookies. Sorry if I sometimes don’t post a comment. If I read from my phone, it’s a pain to type a reply there, but if I’m on the computer, I’m much more inclined to reply 🙂

    Neat, Noura. Zumba is sooo fun; I love it. Glad you are teaching it. I do Zumba Gold at the health club, and it is a little less impact, but awesome. When I had an injury during last month from snow shoveling, I did Zumba sitting in a chair and even worked up a sweat. I know it is helping me in my weight loss.

    Hi Tracie,

    Whenever I eat out, I always look up the nutritional values of the restaurant if they have them available. If they do not, I will do one of two things. I either A – find a comparable food on the WW online site or in the Dining Out Companion. If that isn’t available, B – I will break down the ingredients in my head and calculate the points of the food. I have found that using this Weight Watchers Portion Size estimator (it becomes second nature after awhile), I can estimate serving sizes.

    They had to deliver him early so he is a preemie. He now weighs 6 lbs and is gaining 3 ounces a day!

    Not sure how this works but I want Roccos book, those are some awesome receipes…can’t wait to see who wins the free book. If I dont’ win I’m ready to purchase it on Amazon!
