Happy Sunday all! Who knew you all were Cuban Food Fans??? I think we all pretty much agreed that we want Samantha’s recipe for her Slow Cooker Ropa Vieja ~ it sounds amazing (hint hint) lol.
This morning started off with our Weight Watcher meeting. I am super excited to say that we BOTH were SUCCESSES this week!
~ The Husband lost a whopping 3.8 lbs and I lost 1.4 lbs ~ woohoo!! Chalk up more pounds lost towards our Easter Goal!
We actually now have TWO goals going on for double motivation! My leader challenged her entire meeting to lose 8 lbs by Memorial Day and our 12 week count down started this week. We are putting our 12 week charts on the fridge for M-O-T-I-V-A-T-I-O-N!
Another motivator ~ entering our personal information into our new Eat Smart Precision Get Fit Scale.
As you all know, I absolutely LOVE my Eat Right Precision Pro Food Scale. It really is the BEST Food Scale I have ever owned ~ it’s practical and so easy to use.
The folks at Eat Right sent me their Get Fit Scale to see if I’d LOVE it just the same.
This scale measures everything you want and more!
What I really like about it is that they have a booklet that explains what the results mean ~ what each measure means and what the averages are by gender.
It’s super sleek and thin with their fun apple logo on it. But, the one thing I LOVE the most about it ~ it is spot on with the Weight Watcher’s scale and my weight does not fluctuate no matter how many times I step on/off the scale (yup, I am totally guilty of that!)
Breakfast was a banana, a few berries and 7 cashews (not pictured) ~ 2 points+).
Lunch today was at the Aviator’s Restaurant at the local Sacramento Airport.
We attended a Local Poker Chip Trading Meeting (The Husband has been waiting for this for like 2 months!)
I subbed out my french fries for a garden salad with ranch on the side (2 points+).
Then, they brought out the HUGEST Club Sandwich I’ve ever seen! It was packed with turkey, ham, bacon, lettuce, tomato and AVOCADO!!!
As much as my mouth wanted to eat it ALL, I listened to my stomach and stopped with half since I was satisfied. (8 points+)
Dessert involved these Chocolates he picked out at Trader Joe’s on our way home.
You get 7 pieces for 5 points+ and they come in Strawberry, Blueberry, Cherry & Apricot.
I picked one of each “flavor” for 4 points+. I think the strawberry is my favorite surprisingly.
Then, we shared what I picked out ~ an orange ~ LOL!
Dinner involved one of my all time favorite packaged Guacamole’s ~ Trader Joe’s Avocado’s Number.
REAL in every way, shape and form!
2 Tbsp for 1 points+ or a 1/4 cup for 2 points+!
I actually bought it for our nachos this week, but, we couldn’t resist adding a layer to our tacos as a base!
Layered up to make 3 Guaco-Tacos for 8 points+: (PRINT THIS RECIPE HERE!)
- 3 Mission Extra Thin Corn Tortillas (3 points+)
- 1/2 cup Turkey Taco Meat (2 points+)
- 2 Tbsp LF Sharp Cheddar Cheese (1 points+)
- 4 Tbsp Guacamole (2 points+)
- Lettuce mixed with cabbage & carrots
- Tomatoes
- Hot Sauce!
Guacalicious!

I checked out the spaghetti and bacon meatball recipe… looks SO GOOD. I must make this! Bacon + spaghetti + meatballs ?!? :0) I read a few reviews and think I’ll skip broiling and cook them in the sauce for a softer meatball. Tender = better yeah ?

My scale has been giving me fits for weeks and I keep talking about replacing it with a more reliable model… so your timing was perfect for me. I think I might have to make the leap and get one like yours!

I have an EatSmart scale that I really like, though it’s not quite as schmancy as the one in your pics. 🙂 I’ve found it to be much more consistent and accurate than my last scale.
Also I just saw those Dilettante at our local TJ’s this week too! I got them for hubby, he was a huge fan.
I am a new reader and am loving your site! Your guac tacos inspired a week long lunch frenzy! I used black beans instead of taco meat (since that’s what I had) with the guac. Try the spicy guac from TJ’s – I love it!
