Had salad for breakfast? I promise I haven’t gone and lost my mind enough to start eating salads for breakfast….but, today, I woke up craving greens and bacon in that order ~ you know because they totally go together right lol.
In all fairness, we did have a late breakfast around 10:30 at The Joy of Eating. My goto breakfast food there is having an Egg White Omelet with a Bacon & Jam Sandwich.
I subbed out the french fries and ordered a side salad for Breakfast….the waitress asked me if I was sure that I wanted to start with a salad and not fruit or hash browns.
Simple, refreshing, crunchy and totally delicious with 1 Tbsp. of ranch for dipped on the side.

Then, I moved on to exactly what I was craving ~ The Sunrise Sandwich sans mayo aka, The Best BLTA you will ever eat.
It’s their homemade sweet Hawaiian bread and thick bacon that make it amazing.
I estimated on the high end by breaking down the ingredients….
- 2 slices of their homemade sweet bread (it’s like those Hawaiian King rolls) 9 points+
- 3 slices thick apple wood smoked bacon ~ 6 points+
- 1/4 AVOCADO ~ 2 points+
- lettuce, tomato
Pickles…..
I didn’t really have a “lunch” today since breakfast was pretty filling. I snacked on a pepper jack cheese stick and two cuties mid afternoon while catching up on Chopped! (2 points+)
I have to say my favorite episode was the “Viewers Choice” where everyone on Twitter, Pinterest and Facebook picked some pretty awful ingredients they had to cook with.
I continued my “greens” kick into dinner with simple Taco Salads that took maybe 20 minutes to make from start to finish.
I put together a salad blend of romaine, greens, red cabbage and carrots, then, topped with with 1/2 cup Turkey Taco Meat (ground turkey with onion, peppers, salsa and homemade taco seasoning.)
Made colorful with all types of great toppings ~ corn, mini sweet pepper rings, 1 oz. finely shredded 2% Sharp Cheese, green onions and jalapenos.
When I told The Husband I wish we had avocado, he put some “Fritos” on my plate saying they are totally the same (just in case you all didn’t know that ~ funny). I have to admit, I loved the addition.
Finished with my dressing ~ Jamaican Crushed Red Pepper Hot Sauce!
This totally hit the spot ~ crunchy, salty,sweet, spicy ~ good! 6 points+

Thank you all for being so understanding and for the nice comments on my mini break. It’s good to be back. I am excited for tomorrow, but, it’s going to be a busy day ~ After my Weight Watchers meeting, we head over as a group to Loop the Lagoon doing our own 4 mile walk with a mini picnic, then, it’s off to my nieces baby shower. It’s a good thing we tackled all our to-do’s today.

I tend to have really weird “breakfasts” every Saturday. They are almost always lunch foods. May as well cut loose and have salad for breakfast on a Saturday, right? ha!

Glad you are back. I had a fantastic “spring” salad that would be perfect for breakfast/brunch meal: greens dressed in a light vinaigrette, poached egg, bacon bits and croutons. OMG- the best ever!

In Israel,vegetables salad is always part of breakfast,beside eggs and cheese…not weird at all
