Happy Tuesday all! I LOVE the days that I wake up before my alarm. I honestly think what gets me going is hearing the sound of the Keurig Coffee Maker kick on….I may or may not have a “slight” addiction to making single cups of coffee for anyone who will let me just so I can use it
I usually sip one cup while I am making both of our lunches then I make an iced coffee for the train ride. No pre-workout snack this morning (no bananas!)….
My goal this week for workouts is to fit in 4 runs. Today was day 1 and another awesome C25K (Couch to 5K) run/walk.
Breakfast this week is going to be all about “The Muffin” ~ Bay’s English Muffins that is.
The folks over at Bay’s were nice enough to send me a couple of packs of English Muffins to try.
I am pretty sure they knew they knew I fell IN LOVE with their muffins at BlogHERFood11 when they were serving them up with that amazing feta/jam/nut spread.
Doughy, crunchy bread, creamy cheese, sweet apricots, nuts, butter….need I say more?!
I may need to re-create that spread….I DREAM about it!
The original is 4 points+ each.
I LOVE how crispy they get in the toaster and how they have tons of little pockets to hold your toppings.
Topped with 1 Tbsp of Natural Honey Roasted Peanut Butter (7 points+).
Plus the last of my watermelon…..I am so sad, but, I can wait two days LOL!
I actually made up lunches for the week yesterday as part of my MISSION TO CLEAR THE FREEZER.
This is one of my favorite FAST and EASY recipes that I tried during my Vegan Adventures.
It is from Vegetarian Times Mag and it only takes like 10-15 minutes from start to finish.
VEGETABLE GYOZA WITH EDAMAME SOYCATASH for 7 points+ a serving!
I also brought back my favorite easy to go “salad” ~ Spicy Asian Peanut Slaw (2 points+)!
Yup, I ALWAYS have this on hand too ~ no trips to the store (day 2 lol)!
* 1 cup organic broccoli slaw
* 1/2 cup organic carrots
* 2 Tbsp Trader Joe’s Spicy Peanut Dressing
* Sprinkle of crushed red pepper flakes
I was satisfied after lunch but my mouth wanted something sweet. When rummaging for a mint, I saw that I still had a Jo’s Dark Chocolate Sea Salted Caramel! (2 points+)
Ummmm, the chocolate totally won.

The Husband and I LOVE Susan and know she is going to beat the cancer she has been diagnosed with!
By the time I walked in the door, I was starving!
We totally snacked on some Blue Corn Chips with Chipotle Guacamole and Pico De Gallo we had in the fridge from yesterday while dinner cooked. (6 points+)
Yup, I totally ate off the counter, but, I did balance it out with a Mini Babybel for, you know protein!
I had been planning out dinner all day long in my head so I am sure that had something to do with my hunger levels.
It involved “sticky” BBQ Chicken ~ 3 points+!
These Garlic Fries I bought way back when at Trader Joe’s that I “found” in the freezer.
5 points+ a serving.
NOTE ~ if you make these, you HAVE to make the entire bag…even the directions say so lol,
I cooked them for 25-30 minutes to make them extra crispy since I didn’t want the garlic sauce to make them soggy.
WOW!!! I think these taste BETTER than the fried Gordon Biersch Garlic Fries you get at Ball Games.
They are super crispy, slightly salty and loaded with garlic.
3 oz measured out = a whole lotta garlic goodness
I ate my grilled asparagus like “fries” too. (1 points+)

I absolutely LOVE sweet potato fries, but, if I must go with a potato ~ it’s all about curly or criss cut fries. I am pretty sure I’ve NEVER met a “fry” I didn’t like.

my favorite as of late are the harvest seeded Rudi’s organic bakery. when they are toasted mmm mm. your caramel chocolate? to.die.for! and those garlic fries are going on my trader joe’s list!
it’s great that you got Annie’s on board with the Great Fundraising Act. If you don’t mind me asking, what do you do at Annie’s? I’m majoring in Nutrition in Industry (starting this coming Fall), and am constantly researching new possibilities for my future 🙂 any information would be of great help!

Thanks for mentioning the Great Fundraising Act. I used to read Susan’s blog religiously but it got lost in the interwebs when I couldn’t read everyday in Japan. I had no idea she was diagnosed with cancer, and would now love to donate!

HI JM,
This is the EASIEST chicken you will ever make for only 3 points+ a drumstick!
All I do is grill our drumsticks for 35 minutes, then, cover them in BBQ sauce every 3-4 minutes coating them twice.
If you are firing up the grill, make extra so you don’t have to cook the next night!
