Hi all! We had our first super rainy day in Kauai during our Hawaii Christmas Vacation. It didn’t stop us from taking advantage of being in the rain. We snuck in our quick cliffs beach walk, swam in the rain then BBQ’d eating under the patio cover.I tried The Husband’s new favorite – Portuguese Sausage (like linguica). I still prefer the Chicken Apple Sausages. I also fell in love with a new snack mix I can never but again lol. Leftover BBQ lunch then burgers and salad for dinner.
On Wedding Day, we got up early to walk a different route. Truth be told, I was totally motivated to walk for my cappuccino. We snapped pictures of the mountains along the way – so beautiful.
My sister got married on Anini beach. We all decorated the sand with flowers creating an “alter”.
They looked so happy – the ceremony was simple and so sweet with all the kids involved.

We celebrated with delicious Hawaiian cake. Passion fruit, guava & coconut with a whipped cream frosting.
Then, we headed out to dinner at Hukilau Lanai for dinner. First we started with Lava Flow Cocktails – Pina colada with strawberry – my favorite drink for sure.
My Daily Snap post walk breakfast – ham, turkey & veggie scramble with Hawaiian bananas, strawberry papaya and watermelon. Lunch was BBQ leftovers with Maui onion chips and dinner was amazing!
The appetizers were these homemade purple sweet potato raviolis with a lemon grass chili sauce (unpictured). My entree was the mixed grill – 3 island grilled fishes in a coconut Thai chili sauce over Orzo. I was too full for dessert but had to taste the coconut cheesecake with a macadamia nut crust and strawberry mango sauce. It really turned out to be the perfect day for them – complete with pictures of them snapped on a surf board with a wave then this Hawaiian Merry Christmas sign.
I finished the day at over 14K steps feeling a bit sick from the rich food but it was all worth it. I have my grand finale recap coming your way later this weekend as we are hopping on our flights home now.
