I also totally watched that show “I dream of Jeannie” growing up…how many of you used to watch that show? It’s ok you don’t have to fess up. I know my list of old school shows is pretty long…Gilligan’s Island, The Love Boat, Mr. Ed (I loved that talking horse!)……oh the list goes on and on!
Anyway, I digress…Do you ever wake up in the morning excited about what you are going to have for dinner? That was totally me this morning ~ I was like willing the day to go by quickly just so I could get to the totally delicious dinner we had planned. It probably didn’t help that I have been dreaming of mushroom pizza ever since I had a slice at Mary’s a few week’s back.
Before heading out this morning, I cooked up a Healthy Egg Roll ~ Believe it or not, I’ve totally missed these this week. (SF + 1 WPA) – 5 points+
I love that my Starbuck’s looks like it’s “glowing” today ~ honestly, it’s totally how I felt going there to get my tall nonfat latte…..like it was just what I needed to brighten my day or maybe it is more like it is glowing because I am totally in love with Starbucks (SF) – 3 points+
I ended up trading in my egg salad sandwich today for lunch with my co-workers at Grace’s Table. I started with this Grilled Artichoke topped with a delicious peppery romesco sauce.
Then, I moved on to my usual Beet Salad sans the chicken ~ today, I totally missed the chicken.
Avocado, super creamy fromage blanc, mache lettuce, meyer lemon juice, olive oil, maldon salt
I counted 2 points+ towards my WPA for the real deal cheese. (SS/SF + 2 WPA) – 4 points+
The folks at Keurig sent me a selection of Hot Teas to give a whirl ~ perfect for afternoon tea.
I really like this Celestial Seasonings Green Tea ~ it has the perfect balance of tea vs. green tea flavor without being too grassy (yep, I think most green teas taste like grass )
It paired perfectly with my Reese’s PB Egg. (SF + 2 WPA) – 2 points+
Before starting dinner, I knew I needed a snack so I grabbed an Oikos (one of favorite yogurts of all times).
I count flavored yogurts like this ~ 0% Greek Yogurt = Simply Filling, and 1 Tbsp. of Jam is 1 points+ towards your Weekly Points Allowance (WPA) – SF + 1 WPA or 3 points+
I have been waiting for tonight’s dinner all week long ~ Flat Out Amazing Simply Filling Pizzas!
Did I mention all week long?! I do not know why I waited so long for pizza during Meatless March.
The “meat” topper on today’s slice was sautéed peppers, onions and mushrooms.
After preheating the oven with the cookie sheet in it to 425 and cooking my flat out wrap for 3 minutes, I flipped it and started layering on all my Simply Filling Vegetarian Pizza Goodness!
My first layer was sauce and my meat mix….topped with 1/2 my cheese (low-fat mozzarella) pickled sweet cherry peppers and fresh jalapenos…..
Then, the rest of my cheese (I used 1 oz. in total, finely shredded with a sprinkle of parmesan), fresh sweet red pepper slices, more jalapeno and tomatoes.
Baked for 8 minutes until the crust is crispy and the cheese is all melty and slightly browned.
He loved these so much he had two of them!
If you take the seeds and membrane out of the fresh jalapenos, it’s not hot ~ just peppery good ~ promise – be brave, try it, you’ll like it
100% Simply Filling or 5 points+ for the entire thing!
He was in charge of our salad which I think contained like every salad ingredient in our fridge ~ power to the greens, romaine, carrots, cabbage, cucumber, peppers, tomatoes.
Tossed in Newman’s Lite Lime Vinaigrette (SF + 1 WPA) – 1 points+
Here are my stats for today:
- Simple Filling (SF): 6 WPA (Weekly Points Allowance) used, 9 WPA remaining
- 22 Daily Points+ 0 WPA used, 49 WPA remaining
- 1 Week of being veggie free and I am still loving it.
- 100 pushups down, 750 to go (with a makeup 75)

Hi Jolene,
Using low fat versus fat free cheese is one of the tweaks I do to the program as I like the ingredient lust over the chemicals used in fat free cheese. They are also not too caloric ally different. Here is a post I did awhile back that explains how I work the simply filling technique.

In W/W do you count the oil that you sautéed the mushrooms, peppers and onions in for the pizza? I am sure you know that oil is 100% pure fat. Even the so called good oils. Also what kind of Flat Out Bread did you use for the pizza? It looks delicious.
I am trying to eat plant based 100% of the time but I am not a member of W/W so the simply filling (SF) and the WPA’s are all new to me but intriguing. Where can I find info on them without having to join W/W which I am not convinced I want to do since I am eating mostly plant based and I have always thought that W/W is based on animal products including dairy. Thanks so much.

Hi Diane,
Weight Watchers has you count 2 teaspoons of healthy oils (sunflower, safflower, olive, flax or canola) a day. I actually use a nonstick pan and spray it with nonstick spray to sauté my peppers onions and mushrooms. When you add a little sea salt water comes out so this helps them cook as well. You could use the 2 tsp of healthy oil for this as well. Anything above the two gets counted against your points.
I do think Weight Watchers is a great plan for all dietary types because they do not make you eat boxed foods or follow specific menus. Instead they encourage you to find a healthy balance eating the foods you love in moderation while focusing on healthier choices. I do know several vegetarians and vegans who have been successful on Weight Watchera. It could be helpful google it visit the weight watchers website and search vegetarian and/visit a meeting. You do not have to commit but it can help you get answers to some if your questions.

Danica this flat out pizza looks AMAZING!!! I love how you work the program…you eat healthy and don’t stress too much about the little things (like regular fat cheese vs. fat-free cheese). I agree with you, when you take into account the chemicals they use to make it “act” like cheese it just isn’t worth. Eat the real stuff (or lf) in moderation and count it as SF. Do what works for you.
BTW I love my Keurig and buy the Celestial Seasonings teas all the time from Amazon. They are sooooo good!!!

I used Trader Joe’s Eggplant Garlic spread in place of sauce on a pizza this week. Loaded with veggies, (including some fresh asparagus) and a tiny bit of cheese. Totally De-lish! I love to play around with different ingredients on pizza to keep it interesting!
