Happy Biggest Loser day all!  The Husband said to tell all of you that you can come visit our Farmer’s Market anytime LOL.  Thanks for all the nice comments on him ~ he is definitely a keeper and you all made his day. (insert big smiley’s here ha!)

I powered up with a HUGE Fall breakfast this morning since I knew I wouldn’t have a chance to have lunch for about 6-7 hours.

3 Coconut Pumpkin Flapjacks topped with 1 tsp whipped butter, 1 Tbsp Pure Maple Syrup and 1/2 a banana (7 points+).

Plus a “Maple” Morning Star Veggie Sausage for 2 points+.

All served up with Southern Pecan Coffee.  Breakfast kept me full for 6 hours.  Since I went to the Weight Watcher’s meeting on Sunday to see The Best Leader out there Winking smile, I skipped the at work session. 

I was quick to accept the invite from my co-worker to head out to Sal’s Mexican Food for TACOS!!!

We sat outside on their patio ~ how cool does it look?! This would totally be a fun place to have a Summer BBQ.

I bet “Sal” is a pretty funny guy too ~ he had signs throughout the place that made me laugh.

As I was standing in line (right next to the chips & salsa bar), I was thinking I was already IN LOVE with this place…..

I mean, check out how many different types of salsas, spicy pickled veggies, slaws and options you can add to meals.

Everything in this dish had the right about of heat and flavor from the Cilantro Jalapeno Lime Slaw, Pickled Carrots and chili cucumber slices.

Since it was my first time going out to eat wit my co-worker, I totally resisted getting like every salsa….you know, just to try them.  Next time though…….Open-mouthed smile

BIG homemade tortilla chips are my favorite because your 12 chips really go far when you can break them into pieces as you crunch away (4 points+)

Did I mention that we get a 15% Discount just for showing our badges?! Sal totally won points on my list even before the food arrived. 

Everyone was raving about Sal’s #1 Combo and so I went with it.

Beef Taco (the homemade tortillas are definitely the BEST part!) (6 points+)

Beef enchilada (5 points+) ~ Not bad, but, I am sort of an enchilada snob because I LOVE our homemade Lazy Enchiladas.

Complete with salad, rice & beans.  Usually I pass on the rice and beans part, but, today, I decided it was worth busting into my WPA and I would just skip my afternoon snack/lighten up dinner. 

Their rice made me want to make Spanish Rice again really soon! (8 points+)

I learned my lesson today on WHY I should ALWAYS pack my sneakers for walking to the train.  In case you were ever thinking of trying it, I wouldn’t recommend walking a mile + in heels……

I somehow think the fizzy water I got on my train ride home made my feet feel better though Open-mouthed smile

The Husband had dinner ready as soon as I walked in the door…He doesn’t cook too many things but he can ALWAYS make a “mean” salad in 15 minutes of less.  He even broke out the food scale ~ So Proud!

* Organic Romaine, Asian Slaw, Carrots & Green Onions

* Mini Organic Sweet Peppers & Cherry Tomatoes from our garden!

* 1 Tbsp Chickpeas (0 points+)

* 1 oz LF Sharp Cheddar (2 points+)

* 2 oz Rotisserie Chicken (2 points+)

* 1 Tbsp Roasted Sliced Almonds (1 points+)

All topped with 2 Tbsp Fat Free Italian Dressing (1 points+).

What is one thing you LOVE to have at a Mexican Restaurant?  Do you do anything to lighten it up?

I honestly know I cannot resist Chips & Salsa….so instead, I count out my 12 chips on a napkin (slyly) and slowly break them into smaller pieces to dip in salsa.  After chips, I am a total Taco Girl….I will pick that over just about anything else on the menu and it has to be corn tortillas.

    I try to stay away, as it’s hard to resist the crunchy stuff! We just moved our office, and there is a Moe’s right down the street…I figured out the points from their web-site…maybe lunch next week? Hope you’re doing well!

    Mexican food is my absolute favorite! I can’t resist the chips and salsa, but I grab my 12 chips and eat them as slowly as possible 🙂 My favorite entree is the fajitas, and I ask for corn tortillas or just eat them without the tortillas.

    Mexican food is my favorite! We have a little family run Mexican place we got to and I always order the chicken enchiladas with out cheese. Their enchilada sauce is so fantastic that I don’t miss the cheese.

    I saw some cute little Dr Scholls flats that roll up to fit in a purse so you can have flats when you need them! Might work for you to walk to the train on work days!

    LOVE LOVE anything Mexican….My tactic to maintain some pts plus sanity is to skip the rice and beans……..one basket of chips with lots of salsa and just enjoy…………. no guilt. Tomorrow is a new day!

    A tip: If the chips are eaten very slowly, break them in half or thirds, drink inbetween bites, be the talker at the table……you will be amazed how few chips you will actually eat.

    My Dear and I tried a Mexican restaurant in town a couple of weeks ago and we can’t get enough of it! The ceviche is awesome but the grilled fish tacos are out of this world- corn tortillas with grilled fish, cabbage, and an avocado cream served with the best black beans I have ever had and cilantro rice… YUM!

    I had a ceviche in a Mexican restaurant a couple of years ago, and it was so amazing I still think of it. Lots of seafood, avocado, lime, cilantro….so good!!! Glad you are on the mend Danica!!

    Love “Create your own” Bars! I usually go easy on the guac, not only because it’s high in fat, but because it can take the taste from everything else! I’m a hugeeee salsa lover!

    OMG…i’m gonna have to find Sal’s! Is that in West Sac? Danica, lots of restaurants in the metro area are offering discounts for state employees since the furloughs started…always be sure to ask!

    I LOVE chips and Salsa, Moe’s is my fave, I do count out the 12 chips and get all the salsas to try. I am a corn tortilla chick and I also love fish tacos with fresh cilantro and jalape#nos!!!!
