In the Garden this year….

Happy Weekend all!  Thanks for sharing all your Taco Ideas with me ~ the tacos I cannot wait to try next are oven tacos! My long weekend kicked off on Friday.  It was so nice to get caught up on life and do so many things I’ve been putting off, like, planting this year’s garden!

I totally earned my activity points by mowing 4 lawns, then rototilling the soil myself by hand and planting everything with bird netting & crushed red pepper flakes on top to keep the cats out…fingers crossed they all grow!

Here is what I planted this year:

  • Icebox Watermelon
  • Patty Pan Squash (Mini Squashes!)
  • Cilantro
  • Jalapenos
  • Roma Tomatoes (hello salsa!)
  • German Thyme
  • Onion Chives
  • Sweet 100 cherry tomatoes x’s 2
  • Lemon Cucumbers
  • Basil

I woke up this morning knowing exactly what I wanted for breakfast and it all started with this new nonstick spray I picked up at Trader Joe’s ~ Coconut Oil Spray!

It smells like cooking when you spray it and while it cooks, but, it doesn’t really make your food taste like coconut.

Kodiak Cakes topped with 1 Tbsp. whipped butter and 1 Tbsp. pure maple syrup. 7 points+

Plus 2 extra crispy (another word for burning them Open-mouthed smile) pieces of Trader Joe’s peppered turkey bacon drizzled with a little of the maple syrup (salty, sweet, peppery, bacony- good!). 2 points+

Rounded out with an Americano I picked up after taking The Husband a coffee and a bowl of cherries.  I can’t wait to have this again.

After breakfast, I headed out to the Farmer’s Market to stock up on a few of my favorite things beginning with Blueberries!  I totally snack on all the fruit I buy as I put it away ~ it’s a good thing it’s 0 points+

I bought a lot this week from my favorite farmer ~ fun fact ~ she is a Weight Watcher too!

I was totally hopeful that someone would have cherry tomatoes and the Organic Farmer that introduced me to Delicata Squash last year didn’t let me down!

She also introduced me to a new type of kale I’ve never seen or heard of called White Kale.  She said it is sweeter than Dinosaur Kale and I cannot wait to try it!

Some days I totally feel like a salad and other days the thought of a salad is the furthest from my mind.  I had planned having a taco salad for lunch, but, when it came down to it….all I really wanted was Healthy Nachos!

Layered up with 1/2 cup Turkey Taco Meat, 1/2 oz. low-fat sharp cheddar, tomatoes, green onion, a little lettuce, 1/8 avocado, pickled jalapenos & hot sauce.  9 points+

I spent the afternoon being completely obsessed reading my latest Sophie Kinsella Book.  I did take a break for coffee with ice cream Open-mouthed smile

I find it easier to weigh my ice cream on a scale to measure a serving versus trying to stuff it into a 1/2 cup.  1 serving Dreyer’s Smores with a bite of The Husband’s German Chocolate Cake Ice Cream.  5 points+

Dinner involved this super cool multi-colored zucchini I picked up at the Farmer’s Market too.

I made foil packets with a sprinkle of garlic salt, black pepper, and 1 tsp. parmesan.

4 oz. of grilled tri tip with The Husband’s “secret sauce” Open-mouthed smile (5 points+)

And grilled corn…..I love it when making dinner real is this easy and clean up is even easier since we cooked it al on the grill.

STATS: 28 Daily Points+, 1 WPA used, 11 WPA remaining

After the meeting tomorrow, we are heading to Healdsberg to an Antique Fair and then, to The Wurst Restaurant ~ I cannot wait!

I can’t wait to get back to my book ~ I have a feeling I’ll be finishing it tonight and moving on to another this weekend.

    I totally want that multicolor zucchini! Lol I found and purchased the extra thin Mission tortillas. I had your ever-popular breakfast this morning. Yum! It’s way better on that little tortilla than it was on the gigantic high fiber one I was using. Ha!

    OMG I can’t wait until our TJ’s opens!!! I’m going to go thru all of your old posts and make a list!! Ever think of doing a TJ’s shopping list of your favorites? I collect things with hearts on them, so I LOVE your placemats 🙂 Great job on your weight loss also….tracking is the name of the game!

    Danica you make me so jealous of you living in such a fruitful state! I went to the farmer’s market last Friday and there were absolutely no fruit but apples. T.T I’m so jealous of your berries!

    I completely agree with you on measuring out ice cream by weight. Less to wash too. ~.^

    All you west coasters – – I’m soooo jealous :-/ of your farmer’s markets and inexpensive but beautiful produce! My farmer’s markets don’t start until late May or early June, and we still won’t have any produce (unless they ship it in). And then it’s not as good as you get at the store…
    Danica – My guys totally love the tri tip roast. I can’t get it at any local store (I guess it’s a west coast thing, go figure) but I can get it at TJ’s (a 55 mile RT for me, so I stock up when I go). They like it best when done on the grill and served with the Hawaiian dinner rolls. We call it tri tip sliders. I have to cook up extra for them so they can have leftovers. Thanks again for sharing.
