Individual 7 Layer Dip & Chips, 8 points+

Happy Biggest Loser Day all!  I am glad I am not the only Leftover Queen and/or King out there and that most of you dig leftovers as much as I do.  I actually think I found a few new ways to have leftovers from you all too! 

For all of you who do not like leftovers, do you freeze them to have another time or does that fall into another bucket?

I know….I really do think about random things like that all day long…LOL….

The Husband proved to me today that it doesn’t matter what you have or do not have, you can ALWAYS find a way to track….He used a Sharpee Pen and his work order to log his eats.

I am pretty sure I can NEVER have a reason to “not” track when it’s this simple…..OH and I am pretty sure I could do sooooo many things with his DAILY 46 points+ ~ Jealous!

Breakfast this morning was EXACTLY the same as yesterday and it was just as fantastic.  I am IN LOVE with these Apple Cinnamon Chip Muffins (6 points+)

I LOVE working lunches, especially when I get to pick the place.

I picked 2 entrees ~ Fire Cracker Chicken above (6 points+) and String Bean Chicken below (4 points+)….

Then, swapped my chow mein/fried rice for steamed veggies to save on points+.  I used the Panda Express Nutrition Calculator and are you all ready for this…..

I totally got my Chinese Food Fix plus my 5 a day in veggies for ONLY 10 points+ ~ DEAL!

I couldn’t wait to get home tonight to make dinner!  As you all know I LOVE all Mexican food especially when it involves Chips & Dip! The thing about most dips is that you have to portion them out on your plate and keep to just a serving.  I can admit that I rarely can stick to just a serving or my serving with be one HUGE scoop when it comes to 7 Layer Dips with Chips.I

With INDIVIDUAL 7+ Layer Dips, you get to eat everything you put in your bowl and not spend your entire points+ budget.  I say 7+ because I pretty much throw everything I have on hand in the dish….Get creative, mix and match…..then, dig in, one crunchy bite at a time!

7 Layer Dip, personal size!

Prep Time: 15 minutes

Cook Time: 15 minutes

Keywords: fry appetizer entree 8 points+ vegetarian Super Bowl

Ingredients (1 Big Dip Bowl & Chips)

  • 1/4 cup fat free refried beans
  • 2 ounce Lean Ground Beef, turkey, chicken or Veggie Crumbles, cooked and seasoned with taco seasoning
  • 1/2 oz low-fat sharp cheddar cheese, shredded

Mix and Match all your favorite toppers

  • 1 Tbsp salsa and/or jalapenos
  • 1/2 cup romaine, red cabbage, carrot mix
  • 1/4 cup tomatoes, chopped
  • 1 Tbsp green onions, chopped
  • 1/8 Avocado, diced
  • 1 tsp sliced olives
  • 1 Tbsp 0% Greek Yogurt, drizzled over top
  • hot sauce, optional
  • 24 Tostito’s Bite Size Tortilla Chips or homemade tortilla chips

Instructions

In a small bowl, spread the refried beans in the bottle of the dish. Then, layer it up in the order listed above.

Serve with chips and enjoy every crunchy bite!

STEP – BY STEP:

I actually couldn’t wait to use these Le Creuset dishes I bought along time ago for this recipe. I LOVED the idea of having the chips & dip in the same container.

You can actually use any bowl to layer up your dip and serve your chips on the side.

Start by layering your refried beans and taco “meat”.

Add any salsas, jalapeno, etc.  I used Trader Joe’s Corn Salsa and Jalapenos for sweet heat!

I used 1/4 of an ounce of cheese now and reserved the other half for the top.

Add in your veggies.  I used a romaine, carrot, red cabbage mix I made, then, topped it with tomatoes, green onions, 1 tsp Olives and 1 Tbsp Avocado (you could use guacamole!)

I actually made a mini salad on the empty side of the container to eat with my dip and to make my chips “feel” like more.

I am 100 million % addicted to Mission Extra Thin Corn Tortillas.  When you cover them in nonstick spray, sprinkle with sea salt and bake at 400 for 6-7 minutes they are BETTER than any chip you can buy (almost better than at the restaurant!)

However, my tortillas were bad when I opened them Sad smile So I opted for The Husband’s Chips.  It turns out that Tostito’s Bite Sized Chips are not a bad deal.

24 chips for 4 points+ = a whole lotta dipping fun!

At this point, I am pretty sure I am over my 7 ingredients, but, I just kept going…..I drizzled with 0% Greek Yogurt (my sour cream!) and hot sauce….

Then, finished with the rest of my cheese and a few tomatoes and green onion ~ for color.

You get a little bit of goodness in every single bite……

I actually plan on using the leftovers to make tacos or healthy nachos, but, I have to say….I kinda want to have this all over again Open-mouthed smile

    I need to show husband how your hubby logged his food. He is roughly following WW but can’t seem to get on board with tracking. The picture above shows it doesn’t have to be complicated. Oh, and he gets 44 points to my stupid 26. Not fair!!

    Food today looks amazing. Between the Chinese and the Mexican, you’re killing me! Nice to be reminded, though, that you can indulge in these cravings without breaking the bank.

    Danica ~ thanks for the reminder that tracking doesn’t have to be complicated. When I made lifetime 10 years ago I would use the adding machine at work to add it all up & jot a note next to each number. It was so simple & I have to get back to that (and off the computer, cause once I’m there to track I stay to surf (which should cost points too!)) ? ?

    B and I stopped by Panda on Sat evening for a quick dinner and they had your beloved fire cracker chicken! Be still my heart. I asked for a taste and it was love at first bite. You weren’t kidding… it’s really that good!

    I like the embedded recipage recipe format. Very clear and concise.

    I LOVE the idea of personal 7 layer dips!!! I’m all about single serving and portioned out recipes.

    I see your husband tracked 3 points for the 3 mini muffins he had. And your breakfast was egg and 3 mini muffins that you tracked 6 points….. so I’m taking it that’s the lovely WW math and if you have 1 or 2 muffins they are 1 point each…. but if you have 3 muffins then it’s 4 points?

      Hi Kathy,

      This is the area I go back and forth with but usually tend to error on the high side. In theory, you should be able to eat each muffin for 1 points+ each. However, sometimes when you have more than one serving of the item, it can increase the points+ value more than the single serving. A good example of this is several of the 100 calorie bagels – have 1/2 a bagel and it’s 1 points+ but each the whole thing and it’s 3 points+.

      There is part of me that says, well just eat them at different times and count them each as a single serving, but, there is part of me that says, count it for what it’s worth.

      As with every recommendation I make, if you can count them as single servings (i.e. 3 points+) and lose, then, do it. If you notice you are not losing at a rate you like, then, count the points+ in total (4 points+).

      Does that make sense?

    This looks amazing and can’t wait to try. I agree the Mission extra thin tortillas are great and make fantastic chips. Here is a tip you may not know, corn tortillas can be frozen easily. I bought 2 packages of these tortillas and froze one package right away so I can have yummy chips n salsa when ever I feel like it.
