Happy Wednesday all! Today was tough as it was my first day back at work after out Christmas break. It felt like the longest day ever and I was so hungry all day.
What is it about working that totally makes your appetite kick up a notch?
I started of my day with a fried egg, a slice of Oroweat Italian bread topped with 1/2 Tbsp Land O Lakes whipped butter and 1/2 an orange (3 sp).A tall cappuccino was totally necessary (2 sp).
The highlight of my day was the New Year’s sushi celebration lunch at Mikunis I had with my coworkers. I counted it all as 10 sp.
I had 1/3 of this Freaky Edamame.I had 2 of these Tuna 2 Sliders
Ahi wrapped around fresh crab then topped with spicy sauce, grilled asparagus, avocado and a fried scallop. I totally dragged mine in the Sriracha line.I had 3 pieces of this Kaiser Roll.
Yellowtail, seared tuna, avocado, cucumber, spicy tuna, crab mix, panko shrimp, sauce, masago and onion.Plus 3 pieces of the Benjamin roll without eel
Seared tuna, panko shrimp, crab mix, avocado, jalepenos, sauce, torched and topped with masago and onion.They convinced me to try this Lobstermania roll and it was just not good.
Raw scallops are so slimy lol.By the time I got home, I was starving. Even though we had a fast dinner planned, I grabbed the rest of our veggie tray veggies with ranch to snack on while we cooked.
We made a lightened up version this 6 minute Instant Pot Soutern Mac n Cheese for dinner tonight.
It’s still crazy to me that you dump everything except the cheese into the pot and pressure cook for 6 minutes.I used a box of whole wheat rotini,1 Tbsp butter, 1 cup Trader Joe’s lite mozzarella, 1 oz lite cream cheese and 7 oz (one package) 2% sharp cheddar.
Dare I say this was actually way too much cheese? I think next time I’d use half.This recipe makes 6 one cup servings for 9 Smartpoints.
I am pretty sure every noodle was coated in cheese.Served up with 5 leftover BBQ turkey lil smokies (2 sp).

How do you count your sushi? I have a hard time with it and usually end up counting 1 SP per piece but I didn’t know if there is a better method. Thanks!

Yes, there is definitely a better way. If you put in sushi on your WW app or online tracker, it will pop up with all types. The reason I say it’s better is a lot of all fish rolls you get more pieces per point (think rainbow, tuna, etc.) . Most rolls with a tempura shrimp are 1 point per piece and I count the same for ones with heavier sauces. I hope that helps a bit and let me know if you cannot find it in the app.
