Happy Tuesday all! Thank you all for the nice comments and welcome back on yesterday’s post. You made my day awesome which was definitely a plus. If you were like me, today was a bit rough goin’ as it was my first day back in the office after a 2 week break. For those wondering, part of that break consisted of a 10 day cruise to the Panama Canal with stops in Aruba, Columbia, Panama x’s 2 and Costa Rica. I am hoping to spend a few Wordless Wednesdays sharing some snap shots from our trip with you all.
Speaking of Snap Shots, I couldn’t just post one picture when I went to share my day with you so you are all getting “all the pictures”.
My morning stated with a little “orange juice”. I find it more satisfying to have a zero point Cutie than to have 4 smartpoints of juice.
Paired with a 5 smartpoint Eggwich. 1 slice of Nature’s Own Honey Oat (2 sp), topped with 1/2 Tbsp Land o Lakes whipped butter (1) and a “fried” egg (2).
Sliced in half, doubled up and delicious. I did grab another Starbuck’s tall nonfat cappucino on my way in for a little liquid motivation to get through my day.
Yesterday I made up a batch of my 3 SmartPoints Butternut Squash, Sausage & Kale Soup for lunches. I froze 3 containers to have for future lunches or dinners when I have zero time to cook.
If you haven’t tried this soup, I highly recommend it as one of my all time favorites. It’s so easy to make and you can make it easier buying precut butternut and kale from Trader Joe’s.
I paired it with a crunchy, tart nectarine.
Plus a 4 smartpoint Red Top 0% Blueberry Greek Yogurt for some protein staying power and a little sweetness for dessert.
Also not pictured was the Nip Caramel Candy I stole from my co-workers desk. If you have these, you might as well go for 2 of them as I learned today 1 is 2 smartpoints but 2 are only 3 smartpoints.
I always pack extra snacks with enough for my day to have a snack after each meal or to have an extra snack if I stay late. I didn’t have my AM snack as I was too busy but I definitely made up for it later in the day.
My afternoon snack was fantastic. 2 oz Columbo Buffalo Chicken (1 sp) with a Trader Joe’s Lite String Cheese (2 sp) and an apple. Would you all believe this only cost me 3 smartpoints?! Deal!
I ended up staying later than planned at work and I finally dove into the Macadamia Nuts I brought back from the Hacienda aka Farm we visited in Costa Rica. 1 Tbsp = 2 smartpoints
To balance this out and make my snack more satisfying and keep me from devouring everything when I walked in the door at 8 pm, I added a zero point banana.
The Husband was in charge of picking a dinner from our Menu Board on the fridge. He decided on pulling out the 3 smartpoints Lentil Soup with Sausage & Kale I had frozen in the freezer.
I am not sure about all of you but I totally eat soup just so I can have a slice of delicious bread with it.
1 toasty, cheesy, garlic slice of Texas Toast for 5 smart points.
Bringing my entire dinner to just 8 smartpoints.
Here is the crazy part and what I kinda love about Weight Watchers Smart Points. Even with all the 28 smartpoints worth of food I had above, I still have 2 smartpoints left in my day for something else. I may dive into more Macadamia nuts or maybe scoop some Biscoff or Nutella and I may not use them.
What I can say is, isn’t it the best feeling when you have a healthy day packed with delicious homemade food, that ticks all your food groups and is within your smartpoints budget?
Definitely a success I’ll build on tomorrow.
Night all!
Danica,
Happy New Year!! Your cruise sounded
fantastic!! Now it probably seems like a dream.
Thank you for all your support, inspiration,
and meal ideas. I get so bored with food these days that I
find myself “straying ” from program. Your tips, suggestions,
recipes bring me back to food reality.
Thanks again????
Kelly
Oh wow! Just printed off both of the soups! I have all of the ingredients waiting to be used up 🙂 I’m back on WW full steam ahead and it’s working much better…check out Trading Cardio for Cosmos…I’m in her group and it’s awesome!
Thanks Gail – I will definitely check out the group. I love the name 🙂
Danica
Thanks so much for the last couple of days of posts. I re-joined WW online yesterday and need all the inspiration I can find. Your meals always seem like so much more than what I envision my points will get me. I’m a huge TJ fan and will definitely be making the soup soon. I, too, love soup. (and bread!)
Looking forward to seeing more great meal ideas.
Happy New year, Went to WW today, thanks for the heads up on the new books, glad you are back, missed recipes
I love reading what you have planned to eat. It inspires me to be more creative which makes me more satisfied!!!
Can you tell me what kind of tortillas you used when you were doing simply filling? Also, are they 0 SF?
Thanks so much!
Hi Lindsey,
I love the Mission Extra Thin Yellow Corn Tortillas for corn. They are 1 smartpoint each.
For flour I like the La Tortilla Lite and they are 2 smartpoints.
For wraps I like Extreme Wellness Whole Wheat which are Simply Filling or 1-2 smartpoints depending on the size.
I also like the Multi Grain Flat Out Wrap for pizzas which is Simply Filling or 4 Smart Points.
Thanks,
Danica
Just want you to know you are my inspiration. Still not back on track but I WILL. I look forward to reading your daily and have started on archives. Thank you Danica and all that comment.
