Happy Sunday all! Whenever I say the word “Jinx” it always makes me think of the cat in the movie, Meet The Parents….”here jinxie, jinxie, jinxie”! I know most people probably think “Jinx, you owe me a coke!” What can I say…sometimes I walk to the beat of a different drum LOL. Speaking of Jinxing things…I think I totally “Jinxed” myself last week.
I was all revved and prepared to get back into my usual workout, counting, snapping pictures and daily sharing groove last week. But, I think I spoke way too soon. Last week turned out to be insane…I’ll just be honest here ~ I worked until well past midnight almost every night to meet some big deadlines for this week. Working out didn’t happen, but, ironically, I made a point to eat good thanks to The Husband who made sure I had a lunch & snacks packed plus dinners made. Usually it is the reverse for us…I get up early each day to make sure he has everything he needs.
The thing is now….I know he can do it too…I keep teasing him saying that, but, I actually enjoy taking care of him and it totally feels like a “treat” when he returns the favor. He says it’s team work ~ LOVE!
Here are a few highlights from the past week….
Every morning started with a big cup or two of Gevalia Kaffe House Blend Coffee. The folks at Gevalia know I am a Starbuck’s fanatic and asked if I’d see how their house blend stacked up.
You know what….I absolutely loved it and have to admit I looked forward to waking up every single morning and having a cup of this delicious coffee (over Starbuck’s) ~ it’s rich, strong and definitely wakes you up when you need a boost.
Breakfast were paired with Healthy Egg Rolls….
Lunches were all about salads ~ taking anything we had the night before and making it my salad topper. This was The Husband’s cucumber salad combined with mozzarella and mixed greens.
Plus a side of those homemade quick baked beans for protein staying power.
I am also pretty sure I managed to eat an entire watermelon last week…paired with cheese or nuts and eaten at every snack time.
I think my favorite night The Husband cooked was Meatless Monday. He said he wasn’t sure what to make so he went with what he knew I loved….
Salad ~ Cucumber Tomato Salad with Red Wine Vinegar and Olive Oil
And Salad…His Caprese Salad with balsamic, olive oil, sea salt and black pepper.
Plus Buttered Noodles!
It still makes me smile saying salad, salad, noodles It was so tasty too!
The next night ~ he got fancy….and by fancy, ya’all ~ how cute is this…he looked everything up on his IPad to cook it
We started with Rainbow Salads….
Delicious grilled steak….
That he put over the top by sautéing mushrooms and onion for toppers.
All together with grilled corn. This was hands down one of the best dinners I’ve ever had…I totally think it’s true when someone else cooks for you, it’s always better.
We also made a trip of two down to the local frozen yogurt shop for dessert this week too.
The BEST THING that happened this week ~ Farmer’s Market Season officially started for my 3 favorite markets!

Beets that I roasted today so I can make a beet, pistachio and fresh mozzarella salad for lunches.
And beautiful summer squash. I really wanted to buy more stuff, but, realized I need to pace myself!
This morning we headed out to the Alameda Antique Faire to get our walk on for about 4 hours.
I wasn’t really hungry so I just went with a Venti Iced Dirty Latte (nonfat latte with 1 pump mocha).
By the time we left the market, we were both starving. The Husband has been craving pizza so we decided to stop at Round Table for salads with pizza.
I am heading off to make us Turkey Taco Salads for dinner now.
I’d like to say that this week is going to be totally normal, but, I also know it’s a really big week for us at work. We are on the home stretch now which means life should return to normal soon. Since my week is a bit unknown food wise, I am switching to counting my points+ tomorrow and heading back to Simply Filling next week.
So far I have a giveaway and a Wordless Wednesday lined up for you all and I hope (without jinxing myself again) that I’ll be back each night with my dailies.
All that being said, HERE IS WHAT IS ON THE MENU THIS WEEK:
- Meatless Monday ~ Sun Dried Tomato Baked Tortellini, Salad
- Healthy Nachos!
- BLTA’s, kale chips
- Thai Lime Shrimp, Brown Rice, Asparagus
- Scallops with Lemon Wine and Pasta, spinach salads
- Honey Chipotle Chicken Salad or Grilled Thai Turkey Salads

I know I’ve said this before but you seriously must have the best husband out there! He is such a cutie!!
I just got beets in my CSA this week too and would love to see this pistachio, mozzarella, beet salad you’re making. I’d never have thought to put all those things together!

AH, yes, the hectic week. I’ll be dealing with one of those myself. I have a co-worker off sick today (Monday) so our already small work unit is short one soul. Tomorrow I have a Branch half-day meeting off-site (so much for catching up on work). Wednesday and Thursday is the mad rush to get work done and do software trainings to get my work unit up to speed on a new tracking software we’re now using. Thursday night I head off to the hotel and the weekend is booked until about 5PM Sunday for Ottawa ComiCon 2013 ^_^ Yes, I’m a geek. Will I have time to breathe? Maybe… probably not.

Hang in there! I am so jealous of the Farmer’s Market; those berries look awesome and I’m sure much more reasonable in price than the outrageous amount I pay at the supermarket.
