Just like candy & My Weekly Menu!

Happy Sunday all!  Today started off with a fun topic at my Weight Watchers meeting.  I LOVE it when you get to interact with demonstrations versus just sitting a listening.  The topic was Portion Control ~ one I am constantly working on!  My leader had some of us volunteer and guesstimate by pouring how much we thought a serving was of snacky foods (chips, pretzels and popcorn).  After that, we weighed them to see how “close” we were….Most of us were over, but, it was fun hearing and seeing everyone’s responses. 

The session was just what I needed to get me out of my “funk”.  I actually had a really successful week this week until Friday….then, somehow, it all just went out the door.  It started with a Chinese food lunch for one of my co-worker’s who was going away and ended with eating out at Boudin & Jack’s for my nephew’s birthday party. 

I was kind of grumpy going into my meeting because I was pretty sure the scale would not be my friend and I didn’t want to admit that….It actually wasn’t as bad as I had envisioned based on all the conversations I had in my head for not being smarter.  I was up .8 lb’s (not even a full pound!) and I know that if I stick to it, it WILL go away next week.  It’s a new week and I have two goals:

1. Track it all ~ 100%

2. Get in 4 workouts!

My breakfast consisted of a banana and a coffee ~ it was really all that sounded good.  Well, that is until we ended up planning out the E-Tools & Apps Session I will be hosting with my leader and chatting up about all the delicious places there are to eat around town.

After all that food talk, we were both starving and decided we “needed” to have BLTA’s at The Joy of Eating.

I subbed my fries for this salad topped with red wine vinegar to make it a Simply Filling Salad! (0 points+)

Delicious ~ I think the secret to their AMAZING sandwiches is their homemade sweet bread.

After lunch, we planned out our menu and stocked up for the week.  I have been craving salt all day long (seriously, like maybe I need a salt block or something!)  I decided that the perfect way to “cure” that craving was with Kale Chips!

I LOVE Big MOUNDS of “Chips”…especially when you get the parmesan crispies.  (1 points+)

Served with 1/2 cup of my Healthier Potato Salad. Another thing we talked about this morning.

As you all know, BBQ Chicken Legs are one of my FAVORITE things in life.  It is even better when they are on sale and you can add them to your menu twice in one week!

Grilled to perfection & topped with BBQ Sauce (3 points+)

Since it is already like spring out here, I know we will be grilling up a lot soon ~ I cannot wait!

Dessert involved these new Crispy Jeju Mandarin Orange Slices we picked up at Trader Joe’s.

You get about a cup in the bag and they are absolutely amazing!  Sweet, tart, crunchy and totally perfect for sugar cravings.  The Husband stole half my bowl but I am definitely going back tomorrow for more bags!

  • Greens, Beans and Things Soup Open-mouthed smile

      I do not mind at all. He actually gained 2.4 lbs too….probably because I wasn’t a good influence either :/

    Time for a Trader Joe’s road trip. I’m about 30 miles from the nearest one.

    Grilling??? We had 7-24″ of snow this weekend in Upper Northern Michigan. Power still out for thousands. Thankfully we didn’t lose power and my daughter, H and 4 boys stayed with us as they lost power. We had so much fun.

    that sandwich!!! my oh my I’m craving avocado. and that sweet bread! it all looks so good. I love that you can enjoy good and healthy food even when you feel as though you didn’t have a stellar week when it comes to the weigh in. It shows that healthy eating truly is a lifestyle change, and that it’s not an “all or nothing” mentality! I love that 😀
    I’ve never had that shrimp recipe from Cooking Light, but i recently made their “Border Style Shrimp” with looots of garlic and it was incredible! Your weekly menu looks awesome, as always.

    Great minds think alike…LOL! Take away the olives and sub pickle relish for the sweet pickles and our potato salad recipes are identical!

    I so want those orange slices! My closest Trader Joes is two hours away but rumor has it they are looking for a site here…yippee!

    I have no menu this week. I’m traveling with my hubby and trying to make good choices. Looking forward (in some ways) to getting home to organize my life again.

    OMG those oranges crispies are so good I ate one bag thru the day today!! Glad I bought 2 (should have bought 3!!) LOL Jake tasted them said eww gross mom!! the menu at our house this week is :
    Taco Boats
    grilled turkey burgers, with corn, salad, (kids and hubby have tots with theirs) I have TJ’s skinny fries!
    Orange chicken for the kids n hubby I work late so I will have a Smart one..or left over taco meat in a big salad.
    Dirty brown rice and shrimp, salad
    chicken and noodles, broccoli…
    I have next week’s menu too! Saturday night am going to that event I told you about found a dress that was in the back of the closet and FAB shoes!! 😉

    I bought the Jeju Orange Slices on your recommendation. They are soo yummy, and my kids love them too!
    For dessert, I put a ripe banana, about 1/4 of the dried orange packet, a splash of unsweetened vanilla almond milk and ice in the magic bullet. Oh my, it was like an orange creamsicle with a hint of banana! 2 PP for a huge serving!

    Cheers, Danica! I’ve been reading your blog to get an idea if WW is the thing for me, and I am rah-rah-rahing you on.

    Had a recipe I thought you might like, since points-wise it’s really low, but oh so good.

    Rosemary Grilled Scallops
    Ingredients
    1 1/2 pounds Sea Scallops
    30 Fresh Rosemary Sprigs (each 3 to 4 inches long)
    3 ounces Prosciutto, sliced paper thin
    3 to tablespoons Extra Virgin Olive Oil or Basil Oil (I substituted I Can’t Believe It’s Not Butter Spray)
    1 Lemon, cut in half
    Coarse Salt
    Freshly ground black pepper

    Cooking Instructions
    Remove the crescent shaped muscle from the side of the scallops. Strip the bottom 2 inches of leaves off the rosemary sprigs. Cut the prosciutto into strips just large enough to wrap around the scallops (about 3/4 by 3 1/2 inches).
    Lay a scallop flat on your work surface. Wrap a piece of prosciutto around it and skewer it with a rosemary sprig, as shown above. Prepare the remaining scallops the same way. Arrange the scallops on a plate or in a baking dish. Drizzle them on both sides with olive oil, squeeze lemon juice over them (hold one hand under the lemon, fingers closed, to catch the seeds), and season with salt and pepper. (Go easy on the salt, as the prosciutto is fairly salty.) Let marinate for 15 minutes, while you light the grill.
    Set up the grill for direct grilling and preheat to high. If you have a fish or vegetable grate, place it on top and preheat as well. (You can also cook the scallops directly on the grill grate.)
    Brush and oil the grate. Grill the scallops until just cooked, 2 to 3 minutes per side. Serve at once.
    Makes about 30 scallops, enough to serve 6 as an appetizer, 4 as a main course.
    VARIATIONS: Shrimp grills up beautifully on rosemary skewers (with or without the prosciutto), as do cubes of steak, fish, chicken, or even veal. You can certainly use other fresh herbs as skewers, especially stalks of lemongrass.

    I’ve also broiled mine, checking until they’re golden brown.
