Happy Friday Eve all!! It was rough getting up at 5 am this morning. I had planned on venturing out to make an eggwich for my AM protein, but, it just didn’t happen. I went for a quick fix ~ a perfectly hard boiled egg and a banana. Oh and I “recycled” my picture from yesterday ~ getting “greener” all the time (2 points+)
I hopped on the Elliptical and did a quick 30 minute workout including a 5 minute hill until I maxed out the grade. I have been feeling it in my legs all day.
I was actually willing my morning meeting to get over so I could dig into my “Lemon Meringue Pie”.
I LOVE Chobani Greek Yogurt for flavored yogurts, but, Trader Joe’s wins my heart for 0% and 2% Plain Greek Yogurt!
Each container contains 2 cups so I always use my container as my “bowl” the 2nd day….It’s less dishes to wash that way
1 Cup 0% Greek Yogurt topped with 1 Tbsp Lemon Curd (6 points+). There might’ve been a Low-Fat Banana Bread Cookie or two in there too.
I brought in lunch for my co-worker and I today. We both had 2 Tasty Turkey and Bean Tostadas (6 points+) ~ LOVE! Next time I am splashing hot sauce all over the top.
She brought the Spicy Peanut Slaw (1 points+)
Mid afternoon train snacks ~ Trader Joe’s Lite String Cheese and a nectarine (1 points+)
By Thursday night, I am usually completely wiped out from getting up so early and commuting. The Husband said we should take the night off and go out to eat, but, I STUCK WITH THE PLAN and COOKED!
Nothing fancy, but, it was easy to make and delicious.
4 ounces Boneless BBQ Pork Ribs (4 points+) ~ I LOVE these because they taste just like ribs, but, are healthier since they cut a center loin into “rib” shapes.
3/4 cup Ore Ida Western Potatoes fried in my 2 tsps healthy oil with garlic salt and black pepper. (1 points for the potatoes and 2 points+ for the oil).
Steamed Green Beans with 1 tsp whipped butter, garlic salt and black pepper (1 points+)

I am SO with you on the cooking vs. going out to eat thing! I would probably be at goal if it wasn’t for Duffy’s, lol…and by Thursday, I just want to veg,,,but I cooked last night too 😉 Good for us Danica!! I usually use Jack Daniels barbque.

I just found a new bbq sauce that the whole family loves and it has no funky ingredients or high fructose corn syrup. Now, if I could just remember the name! LOL!!! Okay, I’ll get back to you on that one 🙂
Love boneless pork ribs, too. It’s the only type of pork that I don’t cook into shoe leather! HA!

Kudos to you for sticking w/ the plan! I worked an almost 12 hr day and was just too pooped so I stopped @ WF & picked up a Teriyaki Chicken bowl w/ brown rice, watched a little tv, walked the dogs, & passed out on the sofa! ZZzzzzzzzzzzzzz…

I actually bought the Boneless Pork Center Loin Ribs at Costco and then grilled/added my own BBQ sauce. I WISH Trader Joe’s would sell the boneless ribs – that would be awesome!
