Happy Labor Day all! I woke up this morning determined to tackle my weekend todo’s that I’ve been putting off and to whip up these Ham, Cheddar & Chive Quiche Cups.
In my head, it seemed so easy to make pie crust from scratch and I could make it a bit healthier. Simply pulse everything in my food processor and pour it out to form a dough ball then roll.
This is the point when I remembered how much I dislike rolling out dough especially when you need to get it right the first time lol.
I rolled and rolled then used my 3 inch circle to cut perfect pie cupcake liners. I filled them with Canadian bacon, cheddar, green onions (pretend they are chives) and my whisked egg mix.Baked at 400 until puffy, about 25 minutes.
While I love quiche with crust and these little cups are do portable, I think the pie is so much easier to make.
The buttery, slightly sweet crust pairs so well with the salty ham, sweet onion and cheese. Each muffin comes in at 3 WWFreestyle Smartpoints each.After doing laundry, cleaning house and a bit of gardening, I grabbed a Starbucks to tackle shopping.
Grande iced nonfat latte with caramel on top (3 sp).We decided to use our Olive Garden gift card from The Husband’s Mom for lunch today. Our entire meal was $8 and he also got a cheese ravioli Togo with the bogo deal. Score!
I have to admit, I scoured thetmenu before we went and I was surprised to see they have some things less than 10 sp.
I had a serving of salad (3 sp) and stuck to only one breadstick (4 sp).The Husband had a free appetizer too so he picked fully loaded Italian Nachos – wow!
I was intrigued because I’ve never had a pasta chip….BUT, I looked up the Smartpoints before taking one bite. Any guesses how much?
The entire plate comes in at 49 Smartpoints! I decided it was worth a 3 chip try for 6 Smartpoints.
I have to admit it – it was amazing. Cheesy, delicious meaty, red sauce, spicy peppers and crunchy yet soft chips.I was really excited about the Caprese Chicken as it was only 7 Smartpoints for my plate.
Sadly though, it wasn’t good at all – it had too many competing flavors with lemon and dried oregano overpowering the garlic with overcooked tomatoes and no pesto taste at all.
I had 1/3 of one chicken before deciding it wasn’t worth it. I did eat the parmesan zucchini so I counted this as 3 Smartpoints.I spent the rest of the afternoon relaxing and reading. The Husband decided he didn’t want anything for dinner so I made up a zero point fruit and egg plate. I had 1 Tbsp of Pistachios not pictured (1 sp).
