Happy Monday all! I LOVE that you all get just as excited as I do about MINI anything…..like, yesterday’s 1 points+ Apple Cinnamon Chip MINI Muffins!
They honestly are even better the next day ~ super moist and cinnamony…The cinnamon chips just melt in your mouth, not in your hands LOL….actually, they melt everywhere (4 points+)
Protein Power = staying power when you indulge in mini muffins for breakfast (2 points+)
Powered Up with a Banana & Coffee! Not too shabby for 6 points+ and it kept me full for 4 hours.
I intentionally made double batches of our Sweet Potato BLTA Nachos last night just so I could have NACHOS FOR LUNCH too!
I LOVE leftovers ~ especially when they look like this (9 points+ since I only used 2 pieces of turkey bacon)
Rounded out with Veggie Tray Veggies and Ranch (2 points+)
The Husband requested his favorite meal for dinner and I was all for it ~ dinner was on the table in 15 minutes and it’s the perfect “comfort” food for our rainy day.

- 2 slices Trader Joe’s Fat Free Multi-Grain Bread (3 points+)

I can totally admit I am a LEFTOVER LOVER ~ not just because I don’t have to cook or think of something new to eat, but, because I think so many things taste even better the next day….like lasagna, enchiladas, pizza ~ the list goes on……MMMMM.

There are certain things I love as leftovers the next day. I love stuff that I make that has a spicy kick to it, because the next day you can really taste it. I sometimes get so excited for the leftovers. I always try to make enough food for me to at least have leftovers for the next day. Especially if it’s mexican food or my chicken stir fry’s. YUM!

Luv ’em as long as thee isn’t too much. Hate eating things for too long. Since my husband does not eat what I do a recipe for “four” – is eating the same thing for four days which is often too much.

hey danica, I thought you said the muffins were 1 points+ each? I only see 3 on your plate but you’re counting it as 4… am I missing something? I’m going to make them this weekend but want to make sure I have the points+ calculated correctly. Thanks!

This is the area I go back and forth with but usually tend to error on the high side. In theory, you should be able to eat each muffin for 1 points+ each. However, sometimes when you have more than one serving of the item, it can increase the points+ value more than the single serving. A good example of this is several of the 100 calorie bagels – have 1/2 a bagel and it’s 1 points+ but each the whole thing and it’s 3 points+.
There is part of me that says, well just eat them at different times and count them each as a single serving, but, there is part of me that says, count it for what it’s worth.
As with every recommendation I make, if you can count them as single servings (i.e. 3 points+) and lose, then, do it. If you notice you are not losing at a rate you like, then, count the points+ in total (4 points+).
Does that make sense?

I love leftovers!!!
My teenage daugther always complain when we have leftovers.
And I tell her that leftovers are a blessing, that means we have plenty to eat.
My daughter’s response “WHATEVERRRRRR” and eye rolling. 🙂

I’m not a big leftover lover. Growing up we’d have one night a week that was dubbed “catch-can” [catch what you can] and I’d usually make myself some soup and a sandwich versus reheating leftovers… I have a few exceptions like spaghetti, chili, and meatloaf which I think taste better days later! And turning leftovers into a new dish [chicken into chicken soup] doesn’t count as “leftovers” in my mind 😉

LOVE them. I cook up a storm on the weekends and then we have leftovers all week. That way I don’t feel rushed at the gym, feeling like I must hurry home to get dinner together.

Luv ’em! My husband and I make a big pot of soup once a week and then eat it for 3 or 4 days for dinner along with toast, grilled cheese, salad, or some other kind of sandwich. It’s filling, healthy, and cheap. I am a Weight Watcher, he is watching his cholesterol and sugar, and we are saving for our 2 week vacation in Turkey so it’s good with both of us. After we make the initial batch of soup we ladle the entire thing cup by cup into another pot to see how many cups there are so we can calculate the WW points. I don’t think we’ve ever made a soup exactly the same twice!

I have heard you can only find them during the holiday season and you find them at Raley’s, Nob Hill or Bel Air. Not sure who else carries them, but, I did find out from Josie above that you can order them on amazon.com.

I love certain leftovers. Had some BBQ chicken last night from my daughter in law birthday supper on Saturday night. And today I’m having a big salad left from our salad fixins’ with some turkey. I’ve been buying small turkey breast and baking for sandwiches and salads through the week. Low in points and lower in sodium than the lunch meats. I can’t wait to make these muffins.

It’s a toss up for me. Sometimes I love leftovers, others times I’ll just eat a bowl of cereal.

I do not mind them but only one more time (if they are left from dinner I will use them for lunch). My DH hates them, except for meatloaf or lasagna. When I make extra, I will freeze them (chili as an example)

Love leftovers! To me it’s a game to be able to create new and fun dishes by combining leftovers together in creative and resourceful ways. I try never to let anything go to waste in my kitchen! I once used leftover mashed potatoes and turkey and made a “pizza” using the potatoes as the crust, with the turkey on top combined with cheese and some added veggies. I also used leftover rolls and cranberry to make a cranberry bread pudding. Rock those leftovers out!
