Happy Tuesday all! I actually didn’t buy that basket at Home Goods that The Husband used for a hat on my last post. Although, I probably should’ve just for the on-going entertainment lol. The goal of my post today is to try “Less is More” and let my pictures do the talking. I am always envious of those who can get there point across with just a picture and sentence or two. I know I tend to ramble on a bunch as sometimes I just have to share the story with each snap shot…but, tonight….it’s two days of eats, one sentence per picture and a test to ummm, see if I can be less wordy.

Yesterday started with one of my favorite new things 3 Ingredient Banana Pancakes
So incredibly tasty & filling ~ topped with berries, banana, coconut flakes, pure maple syrup and a little whipped butter (SF + 3 WPA) – 7 points+
I love it when leftovers turn into lunch ~ 2 slices of my Asparagus Potato Tortilla (SF) – 6 points+
I made up a huge batch of this salad by cutting up an entire bag of organic romaine and mixing it with carrots and red cabbage then adding sliced mini peppers and tomatoes.
I always toss my salad dressing all over my salad by shaking it in my container. (I totally want to say shaken, not stirred, but, that’s an extra sentence!)
Funny fact ~ The Husband always cuts my cherry tomatoes in half when he helps with lunches because he says you get more that way. (SF + 1 WPA for 1 Tbsp. Newman’s Lite Lime) 1 points+
I promise it’s a yellow plum in my picture with a Perfectly Hard Boiled Egg. (SF) – 2 points+
We checked BBQ chicken off our list as we are working our way through the freezer to get ready for Meatless March that starts this Saturday. (SF) – 3 points+
I also traded in my kale chips for a little of the Healthy Potato Salad I made for The Husband (SF) – 2 points+
We both were wondering if Swiss Chard counts as being a Southern Food like Collard Greens – any thoughts on that?
This morning I was rushing around to get out the door for an early morning meeting with the UK that was cancelled only after I started driving – fun times!
Healthy Egg Roll (SF + 1 WPA) – 5 points+
My co-worker and I decided that we deserved Starbuck’s since we had all this “extra” time on our hands now LOL. Nonfat Decaf Latte with caramel drizzle and a banana (SF) – 3 points+
I a totally proud of the fact that I had a working lunch at Ristorante Allegria ~ this amazing Italian Food place in an old bank building and I didn’t order pasta!
I did however have two slices of their fresh homemade bread topped with this balsamic, garlic and olive oil dipping sauce. (SF + 4 WPA) – 4 points+
This was some of the best vegetarian minestrone I’ve ever had. (SF)
Paired with a simple salad tossed in balsamic vinegar and olive oil (SF) – 2 points+
I can be totally funny at times ~ being too proud of myself for lunch, I decided I’d earned a 1/2 scoop of mango and 1/2 scoop of triple berry sorbet when we stopped at Annette’s Chocolates on the way back. It could’ve been ice cream so there is a little success there (SF + 4 WPA) – 4 points+
Tonight’s dinner is one of The Husband’s favorite meals ~ we use Bill Bailey Carne Asada to make these super simple Carne Asada Fajita Salads.
Here is what is in the mix (and you can totally pretend this is just one long run on sentence):
- My romaine salad mix above
- grilled peppers, onions and mushrooms
- 4 oz. grilled carne asada
- 1 Tbsp. sprinkle of Queso Fresco (it’s like a salty, crumbly mozzarella)
- 1/8 avocado
- 1/2 cup homemade pico de gallo
Totally delicious and “almost” 100% Simply Filling (SF + 3 WPA) – 8 points+
Here are my stats for today:
- Simple Filling (SF): 12 WPA (Weekly Points Allowance) used, 21 WPA remaining
- 26 Daily Points+ 0 WPA used, 49 WPA remaining

I “almost” did it ~ Actually I think that was harder to do than to just ramble on about my day as though I was chatting with you all over a cup of coffee.

Personally, I love your “rambling”! Your blog is one that I make a point to read every day. I love the pictures, but I also just love getting a peek at your day. You always manage to give me a giggle 🙂 I may not always comment, but I always read! And, I love your recipes and quick, easy meal ideas.
I made your Tortilla last night but subbed spinach for the asparagus because that’s what I had on hand. There were no leftovers at my house with my 2 teenage boys eating! And if there are, they usually gobble it up after hockey practice, so no leftovers for lunch for me! lol My 13 year old requested that I get asparagus and make it again. I love it when I can make a meal like this and they are asking for more. The boys also love your healthy egg rolls!
And I love hearing your stories, your “rambling” if you must call it that. Makes me feel like I know you so well and can’t wait to see what you are up to next! Its not just about your good food and great recipes!!
I have seen your drumsticks a million times since starting to read your blog (for at least over a year)… How do you make yours? They look grilled, which won’t happen here for at least 2 more months (-3 degrees out at this moment at 1pm, yeesh),

Hi Danica, I tried the pancakes and they were delicious. Thanks for the recipe . I have a question and was hoping you could help answer. I just started simply filling as opposed to counting and as I am tracking I’m noticing that my fat free dressing is counting towards WPA. I spoke with my WW leader and she assured me that it is simply filling so it shouldn’t count. Do you know why it shows up that way on the tracking? My leader doesn’t do simply filling so I’m hoping she gave me the right info 🙂
