Happy Tuesday all! How was your day? My day was super busy but I’m proud that I still fit in a walk, a fun lunch and a healthy light summer dinner trying a new low point recipe.
Zero Point breakfast on the go – eggs & cantaloupe.I totally needed a tall nonfat iced latte with caramel drizzle on top today (2 sp).My coworker and I walked to Wok of Flame today and caught up on life, work and our trip.
I had 3 chicken potstickers (5 sp).Won Ton Soup (2 sp)Mongolian beef with steamed veggies…. But, I had an aversion to veggies today so they were mostly left behind (9 sp) plus 1 for my cookie.Tonight’s ‘salad’ was a spin on this Weight Watchers Chicken Sausages with Tomato Bean Salad Recipe. My goal this week is to have at least one salad a day and when I planned our menu I wanted something that wasn’t all veggies.
My modifications included Aidell’s Spicy Mango Chicken Sausages (grilled), snap peas, cilantro, chives & Hot Sweet Mustard.I love the brightness of the lemon & cilantro with the sweet & spicy mustard. It coats the beans and sausage so well.
