Happy Sunday all! We are officially on the home stretch of Meatless March with only one week left! This will be the first year I’ve served up a Meatless Easter Meal, but, I am actually looking forward to it. I am pondering something like Vegetarian Lasagna, Garlic Bread and Salad….
I am having such spring fever the past week and want to spend every single minute out in the sunshine….translation, not really on the computer. The funny part is I still take pictures of every single meatless meal I am eating and think in “blog” all day long lol.
I am slowly making my way through emails catching up from vacation and will work at getting back into my daily posting routine. Thanks to all of you for hanging in there, checking in on me and most of all, for motivating me every single day.
HERE IS WHAT IS ON THE MEATLESS MENU THIS WEEK:
- Spaghetti Pizza, Salad
- Black Bean & Sweet Potato Tacos or Nachos
- BBQ Boca Burgers, Kale Chip
- Veggie Moo Shu Lettuce Cups
- Chilaquiles Casserole, Swiss Chard Blend
- Lunches: Tortellini Pasta Salad

I’m so amazed you made it through all this time with NO meal, esp bacon! On April 1st, I would be having your husband make those bbq ckn legs! Yum!

We had the Spinach and Feta Greek lasagna again last night. It would be perfect for Easter dinner.(Veg Power Cookbook) Everyone loves it. I do add extras like roasted red peppers and artichokes.

Cauliflower curry with brown rice-Monday, Tuesday- butternut/spinach lasagna, Wednesday- egg veggie scramble on toast, Thursday BBQ mushroom burgers.. Love your blog. I also look at skinny taste and the chubby vegetarian for weekly inspiration.

Did you have weigh in today? I’m just curious if a veggie diet equates to weight loss.

I did weigh in and as much as I “secretly” hoped going meatless would equal a bonus in weight loss it has not. I have actually maintained all month within .2 lbs up or down. It has been a great learning experience for me as I have learned about my body and what works best with it. I have my best weight loss results when I am incorporating lean meats with limited healthy carbs and lots of fruits/veggies and a little fat. I have had fun going meatless and venturing out to try new things. I know it has been great for my health and it will feel good meeting my New Year’s resolution challenge.
