Happy Meatless Monday all! Just as predicted last night, today I was pretty much hungry allllll day long. Despite never feeling full, I stuck to healthy choices and I am proud to say that today I made it another tasty Simply Filling Meatless Monday.
Breakfast started off in the usual fashion with The Husband whipping up Healthy Egg Rolls for us. He said since today was fall like, he made a Jack ‘O Lantern. I told him it was the grumpy Jay face lol. 5 points+ (SF + 1 WPA)
Normally eggs hold me over, but, not today. 3 hours later I grabbed a banana to snack on.
And a packaged of the new Weight Watchers Kettle Corn Popcorn Crisps we got yesterday. I think these were just ok ~ it’s like having salty/sugary rice cakes. 2 points+ (SF + 2 WPA)
The Husband had the day off and stopped by the office to have lunch with me. We hit up his usual favorite place ~ Buckhorn’s for Yik Yak Salads sans the chicken.
I forgot how much I LOVE sugar peas ~ crunchy, sweet and totally delicious raw.
In the mix: greens, cabbages, crispy pasta, cilantro, green onions, jicama, red peppers, snow peas, and toasted almonds. I had the sesame dressing on the side for fork dipping. I skipped the tortilla too.
6 points+ (SF + 6 WPA)
This salad actually did pretty good holding me over most of the afternoon. I grabbed two pieces of fruit for my commute home so I would avoid eating the kitchen when I walked in the door.

And a nectarine ~ they both totally hit the spot.
Tonight’s dinner is one of my favorite Meatless Main’s: Baked Cheesy Caprese Pasta.
I sliced up 3 of the big Heirloom tomatoes I picked up at the Farmer’s Market and topped them with a sprinkle of sea salt and black pepper while the broiler preheated and the pasta cooked.
Top with low-fat shredded mozzarella and parmesan.
Broil for 3 minutes until the cheese gets all melty and browned. These tomatoes are so tasty by themselves, even more delicious over the spicy garlic pasta.
After the pasta cooks according to the packaged instructions, I the spicy garlic oil and fresh basil.
Toss and serve!
While I cooked the Baked Caprese Pasta, The Husband took another tomato and made up his version of a fresh caprese salad.
Drizzled with this Balsamic Glaze we picked up at Trader Joe’s.
Normally I’d say make your own (it’s so easy by simply boiling to reduce balsamic). However, this was pretty darn tasty and it doesn’t leave your house smelling like vinegar.
Fast, fresh, delicious and I cannot wait for leftovers! 2 points+ (SF)

I’m addicted to watching Food Network Star and Under the Dome.
I’ve been so frustrated this summer because I started June with 5 lbs. to hit my goal weight. I’m eating practically nothing but power foods, not going over 26 pts. a day, and walking 2 miles a night (in Vegas, no less!). You’d think it would be nothing to lose that small amount, but it’s already August and I’m still 4 lbs. away. I don’t know what I have to do. My WW leader is going over the last two weeks of my food plan and hopefully he’ll spot something. At my wit’s end here. My husband hit goal a couple of weeks ago, so the pressure is really on.

I printed out the recipe for the Baked Cheesy Caprese Pasta, but I didn’t see the measurements for garlic or olive oil. Can you tell me? I want to make it this week, but I want to be sure I have enough garlic and I don’t want to assume how much oil to put in the pan. Thanks! I love your blog!

We love Masterchef and Hell’s Kitchen (although that showmis becoming predictable.) Also, we got hooked on Game of Thrones, and also watched all six seasons of Mad Men. Now we are starting “Newsroom” and “House of Cards.”
Love the Baked Cheesy Caprese Pasta….but I think when I make it (and I will!) I will serve it not on pasta, but maybe a bed of greens, maybe arugala or a chiffonade of kale and fresh basil. When I make that, I will put it on my blog so you can check it out.

We finally started (via NetFlix) watching the Walking Dead. We are so hooked we got through 3 seasons in two months. It’s not just about zombies! GREAT writing and story line too! CANNOT wait for October when season 4 starts! We also started Nip Tuck (really using that NetFlix membership!!), NipTuck is ehhhhh, but when nothing else is on, it works.
