Hi all! How was your weekend? We had such a fun weekend even though we were constantly on the go. I took a big step in “taste” this weekend. We had dinner with my boss and coworker on Friday night at Buckhorn Steakhouse. I actually braved trying the Honey Ginger Salmon and you know what???
I actually liked it. To date, I’ve only liked salmon raw, in sushi because cooked is too strong for me. Perhaps I am turning a corner and I can start ordering all those low point salmon dishes I see! Hopefully it wasn’t the wine or the great time we had that made it such a delicious meal.We spent a good part of the weekend running errands and doing a bit of shopping for birthdays, a work going away and for The Husband.
My favorite thing I picked up is this cute wine bag and Bruce – he goes in your wine to cork it.I did a little work this morning before whipping up a quick breakfast to power up for our day.
A healthy eggroll (3 sp) plus 1/2 a mango.I also picked up a grande iced nonfat 1/2 caffeine latte with a banana for snack (3 sp).
We stopped for lunch at Vasquez Deli. I feel really proud that I got the chicken taco salad, took out 9 chips for scooping and crunch and gave the rest away. (10 sp)Before prepping for the week, I read a magazine and shared my snack with The Husband (he almost always eats or steals half my snacks so I double up lol). Nectarine, Pluot and a perfectly hard boiled egg – all zero points!For the week, I cut up a watermelon and made this Chile Relleno Egg Casserole for breakfasts.I also got the night off from cooking as I made this Tortellini Pizza Casserole for dinner last night.Just so we could have leftovers tonight.
