Mexican Asian Fusion Cuisine!

Happy Hump Day all!  Seriously ~ how good was Biggest Loser last night?!  I absolutely LOVED it and I have to say I was completely shocked by WHO GAINED the 2 lbs!  I LOVE it when they run the Marathon….I really think it just further reinforces the fact that you can do ANYTHING YOU WANT TO TO IF YOU JUST PUT YOUR MIND TO IT!!!  I also think Daris made a really good point that it’s HARD to lose weight while training for a Marathon even if Jillian and Bob made him feel bad for saying it…IT’s TRUE!!!  You may shrink in size since muscle takes up less space that fat, but, 1 lb is 1 lb whether it is fat or muscle it weighs the same!  Ok….soap box done!

I can’t wait for the SEASON FINALE and Biggest Loser Giveaway I have for you all next week!!! :D

One day I will remember to take another picture before I down my Homemade Misto ( 1 c decaf french vanilla, 1 c FF milk, Caramel Drizzle, ice) ~ 2 points!

Nothing really sounded good to me this morning…but, CHEESE always sounds good 😀

1 slice TJ’s Cracked Wheat Sour Dough Bread

1 Laughing Cow Lite Wedge

1 Tbsp Organic Apricot Preserves

Crunchy, chewy, creamy, sweet……delicious (4 pts)!

Mid morning I planned on snacking on this beautiful nectarine but it was SO SOUR!  I tossed it and had my cabot with 2 Ak Mak Sesame Crackers not pictured (2 pts).

Today’s lunch had 3 LEVELS of spice and GREAT chewing power!

Spice #1 ~ Spicy, Juicy, Chicken Taco Meat (I promise this is the last day!)

Spice #2 ~ Blazin’ Jalapeno CRUNCH ~ you choke breathing these in!

THE BREAK DOWN:

2 types of Organic Greens

Organic Broccoli Slaw

1/2 c Spicy Chicken

1/2 oz Finely Shredded Low Fat Sharp Cheddar Cheese

Creamy, cooling AVOCADO!

5 crushed Blazin’ Jalapeno Doritos

Sweet Mini peppers to make it look HOT…..

Then, my co-worker recommended Spice #3 ~ TJ’’s Asian Style Spicy Peanut Vinaigrette!

WOW!  I really am starting to think that this whole Mexican Asian Fusion needs to be a new type of cuisine ~ this 6 point salad was AMAZING!

I seriously would’ve LICKED MY PLATE if my co-workers were not around ;P

You know you ALWAYS have to have something sweet after something spicy because it KILLS the heat :D  Enter…..FROYO from Over The Top Yogurt Shop!!!

FF Vanilla, Chocolate & PINEAPPLE topped with sprinkles, yogurt chips and a little Heath Bar Crunch (5 pts)

I couldn’t decide what to make for dinner tonight….I was first thinking of this Homemade Pizza Margharita until I saw the Dinner Tonight Chicken, Cashew & Red Pepper Stir Fry.

NOBODY was around for me to ask…so, I showed the cashier at Trader Joe’s the pictures and asked him which one he wanted 😀

The hardest part of tonight’s dinner was chopping the veggies.

I LOVE any recipe that lets me use my Italian Grater

and my All-Clad Stir Fry Pan!

I followed the recipe for the most part, but, I added broccoli, a little Oyster sauce and used more Sriracha ~ a 1/2 tsp isn’t enough HEAT! 😉

Now if you can manage to eat 1/4 of this HUGE dish ~ it’s only 7 points a serving!

I steamed up some Bok Choy of the side and sprinkle it with a little sea salt.

PLUS: Super Fancy TJ’s Organic Frozen Brown Rice that looks like I spent hours instead of 3 minutes cooking it 😀 LOL

I had 1/2 a serving and it still seemed HUGE (4 pts).  We both really liked the flavor ~ it’s sweet, spicy and a little tangy.  The chicken actually reminded me a bit of Sate Chicken.

    Yum Mexican Asian fusion cuisine!
    I lurrrrrve that spicy TJ’s Asian peanut vinegarette, it’s seriously the best!! Last time I was there they were out of it which means I’m out of it! Problemo!!

    I was so angry Daris gained weight too… but I think he did SO well on the Marathon, at least that was good! I hope you voted for me, because I can’t vote here in Canada!

    I felt the same way about the comments they made for him and the marathon. I think both were partially right. I think he ate more from the running but it may partially have been that marathon training takes a lot out of you and makes you hungrier and he wasn’t able to handle it his first month home (who could?). But I also think Bob & Jillian were right in that he didn’t eat more specifically FOR the training. I think it was caused by the training but that he still wasn’t completely in control of his food intake. Such a tough thing to face right out of the ranch. He still looks great though and I hope he gets some of the mental things with food taken care of so he doesn’t resort back to his old ways and gain it all back after the finale. So excited for it!

    I wonder if the BL contestants get any kind of counseling while on the ranch to work out their relationship with food, since it seems like they all gain some weight back (am I the only one that noticed that Sione looked quite different during the marathon?). I know Jillian tries to get the contestants to have an ‘Aha!’ moment during the workouts but it takes more than that. I can tell that the show is making changes in response to criticism of their methods and that’s great, I hope they can add in some counseling in the future.

    That stir fry looks insane! I have been making a few myself recently, and they are just so dang good. I love soft vegies…i dont do crunchy pepppers or carrots. I know, im weird! Go Koli!! 😉

    My heart went out too poor Daris. I can totally relate because that’s how I deal with stress — I eat [crap]. I think America will vote him in rather than Koli, because he seems to be more of “America’s sweetheart” than koli. I’m not saying that I like him better, I just think that’s how it will go…

    Weirdly, I’m not rooting for one contestant in particular. I don’t have a favorite, this season. If Sunshine had made it to the final four, she would be who I was voting for. : )

    I live in Phoenix and we have a restaurant called Chino Bandido! It’s a Mexican-Asian Fusion, so clearly you are on to something! I have never been but heard it is AMAZING (and so bad for you… which is I why I am avoiding it!). Your salad looks so good though, that I may have to try the Fusion myself!
