“Mock” My French Toast

Happy Friday Eve all!  Thanks for all the comments on my recipes lately ~ It has been really fun to get back in the kitchen and have a little fun trying to find ways to fit in vegetables for breakfast along with 2 cups of vegetables at both lunch and dinner.

I think aside from sometimes feeling like I might turn into a vegetable from eating so many, that it IS really true that when you fill your belly with so much of the good stuff, there isn’t much room for the not so good stuff. 

Speaking of experiments ~ breakfast was a TOTAL EXPERIMENT.  I saw a recipe for Mock French Toast on a message board and was intrigued.  I pretty much followed the recipe but substituted agave for the sugar free substitute and added a pinch of salt.

“MOCK” MY FRENCH TOAST

Mock French Toast

INGREDIENTS

1 egg

4 egg whites

1/4 cup part skim ricotta cheese

1/2 tsp vanilla

1 tsp Agave

Sprinkle of cinnamon

Pinch of salt, optional

Optional Toppers:

Butter, Maple Syrup, Agave, Nut Butters, Fruit, Super Nutty Granola, greek yogurt!

INSTRUCTIONS

1. Preheat a nonstick pan over medium heat and spray with nonstick spray.

2.  Combine all the ingredients thoroughly using a whisk or a beater. Pour into “pancake shapes” and cook until browned on each side, about 2 minutes per side.

3.  Serve it up with your favorite toppings or enjoy as is.

Makes 2 servings, 3 pts each  (or you can be like me and eat it as 1 serving)

BEYOND AMAZING!!!! These little thin pancakes seriously taste just like FRENCH TOAST, but, better.  Sorta like a crepe, but, with the flavor of french toast. 

I topped mine with a little ICBNB Spray, a little extra Agave and some Super Nutty Granola……MMMM, I am so going to have these again soon!

The breakfast veggie of the day was some Yellow Bell Pepper Strips.  I actually think I LOVE having these more than cucumbers on the side.

A ~ A BOWLING alley 😀 hehehehe ~ yes, I totally eat these string cheeses JUST for the riddles.

Lunch was a repeat of yesterday since I had the other half of my Mayo-Less Tuna to use up.

I like romaine lettuce leaves over bibb lettuce because they are crispier, juicer and make perfect little “boats’” to fit my tuna salad.

You know another cool realization??  My co-worker today saw my lunch and was like “THAT’s SO HEALTHY! I wish I could do that” 

When he said that, I just kept thinking….well, really, it’s just THAT GOOD I wouldn’t trade it for anything else.

Isn’t it funny how it takes 21 days to form a habit……but, it’s not quite 21 days yet and I look forward to and crave….

This is by far my FAVORITE HUMMUS of all times ~ I only know one vendor at the Farmer’s Markets out here who sells Spicy with Harissa Hummus. 

I wonder if I can freeze some for the winter….have any of you ever tried freezing hummus and using it later???

The Completely Healthy Lunch

Dinner tonight involved a HUGE Bowl of Parmesan Kale Chips ~ I LOVE these so much, I actually forgot to bust out my ketchup with them. (2 pts)

It was honestly the PERFECT dinner because I got to browse through all of these while chowing down.

Fun Halloween Magazines

I am in charge of the Halloween Celebrations this year at work so buying a bunch of magazines for ummm ideas is totally justified ;) 

Yeah, ok….I bought the Food Network Magazine because seriously ~ I want to make that SQUASH SOUP WITH A TON OF TOPPINGS IN AN EDIBLE BOWL!

SO, SO GLAD tomorrow is FRIDAY and a short day, but, long day!  We are going to watch the CAL vs RENO game tomorrow night ~ Part 1,578,890 of The Husband’s Birthday Gifts….He is like a little kid before Christmas right now preparing for it ~ so funny!

    Wow, the Mock French Toast looks amazing! Might try that this weekend! Yum! And your tuna boats just gave me a “lightbulb on” idea. Last night we made tacos for dinner. I love tacos, but didn’t want to waste the points with the shells, so I skipped the shell, made a salad instead topped with the taco filling, some avocado and mango. Now I’m thinking it would be really great with the “romaine boats”! Sounds like leftovers are in order for us this weekend!

    I tried making the jicama hashbrowns last night, and I just couldn’t get the jicama to crisp up/brown up. : ( I was totally looking forward to it, too.

    My daughter saw the magazine of Martha Stewart and asked if it was Lady Gaga. LOL. I’m pretty sure that’s the first and ONLY time MS has been mistaken for LG.

    Your breakfast sounds really good. I’m not really a pancake person bc they just don’t keep me full, but these ones have lots of protein. Paired with a peice of WW toast and I’d be a happy girl!

    I’m with you on ‘you crave what you eat’. I’ve kind of been doing my own personal challenge right along with you. Trying to eat really clean and heeps of veggies. I rarely get veggies in at break fast bc 1) I’m lazy and I don’t want to cut them up 2) I try and get them in in my other meals. And it’s WORKING! The other night I made that lasagne for Brian and originally planned to eat some, but as it was baking I kept thinking, boy… some baked ‘gliding calm’ tofu, b-sprouts and quinoa sounds SO good. So I gave in to my craving! And made enough for dinner again last night. I could hardly believe that I turned down lasagne, but I figured I should give in to the craving. And to be clear, I’m not saying it’s ‘bad’ to eat lasagne, I just wasn’t craving it at the time… we’ll talk again about this next week 😉

    Hiya K,

    You know, I am not sure that the “jicama hashbrowns” would get crispy as they steam then caramelize when the water/oil is added. You might try maybe omitting the water and boosting the oil to maybe 2 Tbsp’s to see if they would get “crispy”. I LOVED the flavor and it did remind me of real potatoes, but, not the crispy ones.

    That is funny about Martha, but, you know what, I think your daughter is right 🙂

    Help! Tried to make the mock my french toast. It was liquid thin and poured all over the pan. I was able to cut it in pieces and get it to flip. It tastes more like a sweet egg to me. I used 100% liquid eggwhites, and I wasn’t sure how much to use. I’m assuming you used real eggs (whites only), and they were thicker and maybe that’s my problem??? Any advice? I wanted this soooo badly!

    Hi Staci,

    If you use liquid egg whites, you will only want to use about 2-3 Tbsp and then pour into small rounds. It is a thinner batter but it should still form into circles.

    Tried the mock french toast again this morning. Used 3 Tbsp of egg whites instead of 3/4 cup! LOL These were wonderful! For me, it made 3 good sized “pancakes” instead of 6 little ones. Who wants little?! ha So I ate the whole batch for 6 points. Since I used the right amoung of egg whites, they actually did taste like french toast and not just sweet eggs. 😉 My 4 kids gobbled them up, too. It was a hit.
