My LOVE Affair….

Happy Friday Eve all!!  I was so tired this morning, I pretty much snoozed so long that I randomly threw my breakfast in a bag to go.  It actually turned out to be pretty darn tasty though.

Have you all ever thought to put Tortilla Chips and Salsa in your eggs?  If you haven’t, you totally need to try it – it rocks!  Yup, my LOVE AFFAIR with TJ’s chips continues 😀

Tortilla Salsa Scramble

1/2 cup egg beaters

HOT SAUCE

Sea salt & black pepper

1 small heirloom tomato, chopped

3 TJ’s Soy & Flaxseed Tortilla Chips – 1/2 crumbled in during cooking and 1/2 topped post cooking

Wholly Medium Salsa

I totally wish I had cheese because this would’ve made my eggsellant breakfast complete ;)  (2 pts)

Plus a side of crunchy pepper sticks

Red Pepper Slices

Anyone know the answer???? Today’s riddle was HILARIOUS to me….the answer is…….A Cornstalker 😀 hehehehe (2 pts)

Nectarine & string Cheese

It’s the little things, like having MORE TJ;s Flaxseed Tortilla Chips, HUGE amounts of guacamole on a fully loaded Slow Cooker Taco Casserole….I am so easy to please LOL.

Guacalicious

All of that GUACAMOLE GOODNESS comes from one BIG 100 Calorie Pack of Wholly Guacamole.  I seriously think 100 calorie packs of Guacamole are one of the BEST inventions.

I actually think this gets even better the next day because all the flavors blend and really just mix well together.  I was sad when I was full 2/3 of the way through since that mean I had to stop 🙂 (10 pts)

Crockpot Taco Casserole

My lunch kept me going all afternoon so I didn’t need a PM snack.  I LOVE it when that happens.  It worked perfectly since we were heading out of town early to my hair appointment for me and poker for him.

I earned super points in my head tonight when The Husband picked up Burger King for dinner and I had none.  Instead, I stopped at Rice Express and custom ordered STEAMED BROCCOLI CHICKEN and used soy sauce & Sriracha as toppers.  I LOVE that they ONLY used white meat chicken.  The entire container is 4 points, but, I only managed half of it.

Steamed Broccoli Chicken

There is just something so fun about eating out of a Chinese food box.  The Starbuck’s on the right is mine (Grand FF Decaf Latte – 2.5 pts) and the left is the one I brought my hair dresser 🙂

The Perfect Combination

I am so pumped that it’s going to be Friday in a few hours and so many FUN things happened today, but, more importantly, we head to the Grand Canyon 1 week from today – yahoo!

One more day to enter to WIN A SHOPPING SPREE OR GET SOMETHING FREE!

I so need sleep, I think my corniness comes out more when I am tired.

    Well I do know how wonderful salsa and eggs are but I never thought to add crumbled chips. Brilliant! 🙂

    I love those chips! I’ve been eating them for years – I love getting some protein and fiber with my crunch. Since I know you LOVE all things spicy – have you tried the Spicy Version? They have almost identical stats (same protein and fiber, maybe like 10 more calories) but they are so good! You definitely don’t need any salsa, just eat them plain!

    Congrats on your September weight loss – over 8 lbs is amazing!

    yay! you reminded me i have a few guac 100 cal packs in my freezer!! i hope they’re still okay! 🙂 i love chinese food. they are one of the FEW places i order out steamed veggies because they TRULY add nothing to them! usually they’re soaked in butter…even when you ask for NONE. <3 xo. happy friday!

    Those are some mean lookin’ migas – I have Central Market Hatch Chili Tortilla Chips calling my name to be opened…you may have just inspired my next breakfast!

    No TJ’s near me, so no soy+flaxseed chips, but I do love rice chips.

    OMG! Chinese Steamed Chicken + Broccoli is like MAGIC! It ALWAYS tastes SOOOOOO GOOD… even when served NAKED! It’s so weird, I need their secret, but then again… maybe I don’t want to know? ha ha ha.

    Chips in the scramble is brilliant!!! It’s so funny how a restaurant can make steamed chicken and broccoli taste so good, but if I tried to make it, it would taste like garbage.

    Do we get to see your hair ?! Just got my hair done Friday 😀 Looooove a fresh do… Roots BE GONE! HAHA
