My New Instant Pot & Weekly Menu

Hi all! How was your weekend? Our weekend has been so fun as I lost 1.8 lbs this week and  we had our last Christmas celebration with my family yesterday. It was great to see my brother and sister plus the rest of the family as we all haven’t been together since they moved away. I also can finally share with you all one of the fun gifts we all got to cook together.

But first – Breakfast! Today we had my favorite 1 Point real deal Bacon from Trader Joe’s and eggs (3 SP for all of this).This means, I totally had room for my 2 Smartpoint tall nonfat cappuccino with caramel drizzle on the foam.For lunch, I had more zero point Navy Bean and Ham Soup plus 1/2 serving goldfish (2 sp).Why the Goldfish? Because The Husband has finally convinced me it’s delicious to have crunchy fish swimming in your soup. I totally fished out each cheesy bite first lol.I scored an awesome deal on Instant Pots after Thanksgiving and have been anxiously awaiting giving them to my family so we could all cook and create recipes together.

I have always wanted a Pressure Cooker but they intimidated me. Even reading the instructions today made me nervous.

But, it’s actually not hard at all….I think 🙂 I’ve only successfully tried the water test lol.There are so many settings.I highly recommend downloading the app – it has a great set up checklist, video and 700+ recipes.

This article is fantastic and so is the Instant Pot Facebook group which has so many tips, recipes, etc.

Here is everything you get in the box and I am heading to Target tomorrow to buy this stand to store it on. (It’s $30 and currently 10% off – in the Target app or using the promo code HOME).If you all have a favorite recipe, please share away as you know I never get enough recipes lol.

This afternoon, I grabbed a coffee, Dove Dark Chocolate and dove into my new cookbook and magazines. (2 sp).I used our leftover bacon to make BLTAs for dinner tonight. I had mine open faced as I’d much rather have extra avocado over bread. (7 sp).

Served up with a simple salad topped with olive oil and blood orange balsamic. (1 sp)17 Daily WWFreestyle Smartpoints, 8K steps….I am planning a movie snack later of apples with mixed nuts & 4 rollover points!

  • Appetizer night (New Year’s Eve)
  • Instant Pot Sesame Chicken Bowls
  • Instant Pot Southern Mac n Cheese (made Healthier), salad
  • Shrimp, Spinach, Orzo Salad
  • WW Shrimp & Sausage Paella

    I love doing hard boiled eggs in the instant pot. Put one cup of water in the pot and then place the rack inside. Put 6 eggs in the pot and cook on high for four minutes. Do quick release and then rinse the eggs under cool water.

    The eggs peel so easily when cooked in the instant pot!

    I just read the last blog post you wrote and discovered you already did eggs in your instant pot ?

      Hi Beth,

      Yes, I did try them out this week and I have to say this might be my favorite thing yet. The shell literally slides right off. I think I’ll try one minute longer as I like my egg fully hard boiled and at 6 minutes it was about 3/4 there.

    I bought the IP months ago, still haven’t opened the box. I’m scared too. I want to make the Starbucks copycat sous vide egg bites.

      It does seem scary but honestly it’s not at all…..it’s much easier than I thought. You should try it out 🙂
