My Sous Chef Rocks!

Happy Sunday all!  Rain, rain, go away….come again another day! It’s supposed to be Spring and I know April showers bring May Flowers and all, but, I think I am ready for it to just be Spring.  That is probably until it’s like 90+ degrees, then, I will want the cool weather again 🙂

I woke up craving a BIG bowl of Oats, probably because It has been a rainy cold day today.

1/3 c Quaker Old Fashioned Oats

1 Tbsp Ground Flax Seed

2/3 c Water

A few Cinnamon Chip grinds

1 Tbsp Trader Joe’s Dried Berry Blend

4 Trader Joe’s Candied Pecan halves

1 Tbsp Nut Barn Crunchy Almond Butter

1 tsp Pomegranate Blueberry Jelly

Sprinkle of Coconut

WOW ~ That’s a lot of ingredients for my 5.5 point bowl of oats LOL.  It was delicious and hit the spot.

We had planned on walking up to Starbuck’s but it was pouring so we drove.  I ordered 4 pt Grande FF Chai Tea Latte…..another one of my cold weather favs 🙂

I spent some quality time today finishing up MY LINK LOVE TAB ~ make sure you check out your name and let me know if I didn’t link it up right 😀

Lunch was totally random and thrown together based on what The Husband and I thought sounded good.  He has been my Sous Chef all day in helping to make everything.

1 c Western Potatoes with peppers and onions

1 Poblano Pepper Mexican Cheese Chicken Sausage

1 1/2 Zucchini’s

2 tsp Olive Oil

All topped with Annie’s Trader Joe’s Organic Ketchup.  Completely delicious and only 6 points for my entire bowl – LOVE it!

My stomach was full but my mouth wanted something sweet.  So, we shared 3 cuties.

I spent the afternoon working on My Open Sky Shop adding a TON of new items to be unveiled tomorrow!  I am super excited to share it with you all!  We watched a few movies while I worked and snack on some “SMARTIES” that Kristin sent in my Canada Package.

I had 1/2 the box for 2.5 pts.  The verdict ~ they are like super crunchy M&M’s with a slightly fruity taste on the outside…..interesting.

Some gummy bunnies also made an appearance. (one package is only 1 point)

I spent the rest of my Sunday playing in the kitchen working on a couple recipes I wanted to try.

Do you all remember when I put my Flat Leaf Parsley in my Herb Keeper during my Fridge Makeover?  I wanted to share an update with you all on how it’s doing after TWO WEEKS ~ Totally Fresh looking!  I LOVE my Herb Keeper – it keeps your herbs fresh for 2-3 weeks – AWESOME!

Recipe #1 was trying to make Home Made Chicken Pot Stickers.  They turned out to be a COMPLETE SUCCESS! 

We both ended up trading in our planned dinner for these!  They were so tasty no sauce was needed….recipe & stats coming this week.

Even our adopted cat wanted in on the action :)  She kept coming over and looking at us as we prepared the Chicken Pot Stickers…she is so adorable.

Recipe #2 was Coconut Banana Cupcakes that I am making for work.

I followed the recipe with the exception of adding Vanilla Extract.  I have to say that my icing looks nothing like theirs…then again, I’ve never had fluffy icing either.

The Husband said they are good and had two.  I had a bite of his and thought it was OK…I like how the buttermilk made the frosting taste cream cheese like.

A HUGE Thanks to my Sous Chef (The Husband) for helping me out in the kitchen (cooking, photographing AND clean up) all while doing laundry today 😀 He rocks!

    Laura showed me the coolest trick for decorating cupcakes. She put the frosting in the microwave for like 10 seconds and it becomes a little runny. She then takes the cupcake and turns it upside down and dips in the frosting and wham o – ready for sprinkles, coconut, whatever.

    And it is “sous” chef- but no worries, I had no idea it was spelt that way until 2 months ago 😉

    He’s so nice to help you out! I would have gotten a huge groan from the boyf if I had asked!! lol

    Hi Christine,

    You know, I’ve never tried to find them in the US but they came in a Canada Package I got from Kristin.

    Maybe they have them at like Whole Foods? Just a thought but do tell if you find them 😀
