Happy Monday all! Thanks for all the great feedback on my Weight Watcher’s presentation. I actually had a lot of fun doing it because I had the chance to learn new things myself as well as help others out.
This morning’s breakfast was on the go since my day started off with a 2 hour meeting at 8.
Chobani 0% Lemon Greek Yogurt topped with 2 Tbsp Coconut Almond Granola with a banana on the side (5 points+)
In between meetings, I stopped at my desk for protein pick up ~ A perfectly hard boiled egg for 2 points+.
Sticking with working on eating from the pantry and freezer this week, I brought one of my all time FAVORITE Amy’s Meals ~ Tamale Verde.
I always keep a few meals like this on hand for times when I do not want to cook.
100% REAL ingredients ~ just like you would have if you made this in your kitchen. There is NOTHING you will not recognize.
It’s dairy free, gluten free, vegan and completely delicious.
8 points+ for the entire box.
The green salsa verde compliments the sweet corn tamale that is stuffed with black beans, veggies & corn. The brown rice totally adds a great chew factor.
These baby watermelons we got at Trader Joe’s were soooo good! I can’t wait for Farmer’s Market season.
Mid afternoon snacks ~ 1 points+
Since The Husband had today off, he decided to surprise me by cooking dinner! Don’t be too fooled by that though (notice the BBQ and steaks ~ he will cook anytime he gets that )
Grilled Corn (2 points+)
Grilled Steak seasoned only with sea salt & black pepper
~ 4 oz cooked lean sirloin steaks (4 points+)
Trader Joe’s Organic Mac (7 points+)
My all time FAVORITE way to eat zucchini/squash ~ Super Cheesy Cheesy (1 points+)
He actually made really big salads to go with this too, but, I am saving mine for lunch tomorrow just so I can make a Burger Salad!

My Monday made good use of leftover crockpot cream cheese chicken that I had frozen. We made tacos with it. Yum! Thanks for asking!
I love Amy’s frozen meals. They’re a cut above. Mind if I ask what brand/where you got the coconut almond granola? That sounds divine!

The best Monday of my Monday was sleeping in (1st g teacher on spring break) and going to aerobics with my mom. I’m proud of her!! 🙂

Had a really nice cod on Sunday with some very nice trimmings, including a glass of wine AND got I to open the box of Sees candy that was a valentine gift. (opened because I hit my goal weight on Sunday) The good thing this Monday was my scale indicated no weight gain after celebration.

That Amy’s Black Bean Tamale Verde is my absolute favorite meal!! I always have it on hand!!
One good thing about my Monday was that I went to Total Conditioning Class at my gym and got in an amazing workout!! Followed that up by going up and making a delicious dinner of Morningstar Farms Spicy Black Bean Burger, Kale Chips and an Orange for 7 points plus!!
