So, I have a question for you all ~ What is the first section of the paper you read in the morning?
For me, it goes like this….Horoscopes, Dear Anne/Abby and then….comics!
All read while eating my Healthy Egg Roll of course! (SF + 1 WPA) – 4 points+
Our afternoon meeting was totally planned around being able to go to the Napa General Store for lunch. I absolutely love this place ~ it really is a store with a cute restaurant out back on the Napa River.

I love my co-workers because they love ordering everything and sharing it!
Starters ~ Champagne Poached Shrimp Spring Rolls
As delicious as they sound. I totally went back for more. (SF+ 2 WPA)
The coolest looking dish we ordered was the Sweet & Sour Clay Pot. I seriously want to go out and buy a clay pot just so I can cook with it.
Chop veggies, jalapenos, chicken, pour sauces over, roast in the pot in the oven and your done!
It was slightly sweet, spicy, coconutty and delicious.
Our waitress gave us instructions on how to serve/eat it. You take the rice, dump it in so it soaks up the sauce, scoop and dive in.
We also knew we had to order something with bacon because the entire store smelled like bacon when we walked in. This is their gigantic turkey club ~ what is amazing about it aside from the BACON! is that they use hand carved turkey.
My plate ~ not so simply filling, but, totally worth the points+ (SF +10 WPA)
I am totally the person at the table who always steals all the vegetables ~ good thing nobody wanted the salad and it was all mine
This afternoon flew by at work and before I knew it, it was time to head home and make Flat Out Pizzas, with The Husband.
I really wish we had mushrooms, but, I made do using peppers and onions. For the record, it’s not quite the same although tasty.
I always sauté whatever veggie I am using to caramelize it and get rid of the excess water so it does not make the pizza soggy.
Prep any other toppers while the veggies cook.
I did not have any homemade or store bought pizza sauce so I improvised using tomato paste sprinkled with Italian seasoning.
We built our pizzas layering on everything from the veggies on up.
Fresh jalapeno rings are my new favorite thing.
Mine is in the front, his is in the back ~ we used turkey pepperoni, low-fat mozzarella, peppers, onions, jalapenos, sweet cherry peppers and olives.
Slice into 4 pieces and dive in! The olives and turkey pepperoni add 2 WPA ~ without them, this would be 100% Simply Filling.
Served up with a fast salad a la The Husband with Newman’s Light Lime Vinaigrette.
The best part is I made an extra pizza with salad for tomorrow’s lunch.
STATS:
- Daily points: 26 points+, 0 WPA used, 49 WPA remaining
- Simply Filing: 15 WPA used, 20 WPA remaining

Never thought about using Flat out for pizza. What a great idea! How long do you back it for?

Hi Jani,
I put the cookie sheet in the oven while it preheats to 400 degrees. Then, I use a little olive oil on the pan, add the flat out and bake for 2 minutes. Flip it, top it and bake it for an additional 5-7 minutes until the cheese is melted.

I use the Mission Yellow Extra Thin Tortillas. I find them at Super Targets and my local grocery store, Raley’s.

Hi Danica, I have been following your blog for such a long time and have finally decided that Simply filling could be my answer. I own a restaurant outside of Phildelphia and there are so many temptations that can be enjoyed using power foods. I love your posts and especially the pictures. They give me so many good ideas. ? On the breakfast posted with the egg and cheese on the healthy eggroll. What is the name of the products you use for this. It looks great!!

HI MJ,
I always use the Mission Yellow Extra Thin Tortillas, farm fresh eggs and sriracha. I do spray the pans with nonstick spray and season the egg with sea salt and black pepper. As for the cheese, it depends ~ I go from using Sargento Light, Sargento Extra Thin or Trader Joe’s Light cheeses.
