Happy Friday all! I am so glad the weekend is finally here. I also have so many fun things to share with you all today.
First – the fun WW news I am excited to read about. Did you all know that WW has partnered with Blue Apron? Beginning in January, they will offer up WW Smartpoint friendly options (according to their Q3 earnings release – yep, I sometimes read the finance news). I am all over that when it happens.
I also have one delicious recipe renovation that I made for dinner tonight.
Today was our work holiday party (as in my job today was simply to attend and we got to go home – awesome!)
I kept breakfast to 0 Smartpoints.But, I did need my caffeine fix for our 2 hour bus ride to the venue.
Tall nonfat cappuccino with caramel drizzle on top (2 sp).Our party was held at The Century – a 1912 building that was decorated very elegantly.They had two photo booths and we made sure to take way too many pictures together. This was my favorite as we found out we had 5 seconds to switch in between lol.The appetizers were my favorite part and I probably could’ve just eaten plates of these then called it a day. But, I refrained.
Pesto bruschetta bread, brie, caramelized onions, bacon bread, 1/2 a fresh spring roll and a walnut stuffed, bacon wrapped date that was drizzled in balsamic BBQ sauce. I estimated 6 Smartpoints.I was so excited to see healthy options for lunch. I picked salad, roasted veggies, herb chicken breast, 1 slice tri tip and a roll. 6 Smartpoints estimate.For dessert they had these petites on every table to share. I enjoyed 2 for 6 Smartpoints with coffee.

For dinner tonight, I made a Healthified version of this not so Sloppy – Sloppy Joe Casserole recipe.
Here is how I lightened it up….
I skipped the oil and subbed ground turkey. You could save even more points using ground turkey breast.
Brown the turkey over medium high heat until browned, season with salt & pepper.Add the onion, garlic and bell pepper continuing to cook for 5 minutes.Add your homemade Joe sauce. I used only 2 Tbsp dark brown sugar. Simmer for 5-10 minutes or until slightly thickened.Remove from heat and add the par-cooked pasta. Stir to combine.
Pour everything into a casserole pan and top with 6 oz 2% extra sharp cheddar cheese. Bake at 400 degrees until the cheese is all melted and the casserole is bubbling, about 15 minutes.Sweet, cheesy, meaty, barbecue noodles….seriously, what’s not to love about this sloppy goodness.
1/8th of the pan is 9 Smartpoints. I served it up with a simple salad for good measure.
