Happy Monday all! This morning I woke up craving my Healthy Eggroll. It’s been too long since I’ve had this cheesy, eggy, goodness.1 Fried Egg on top of a crispy tortilla with melted reduced fat sargento cheese and sriracha (3 sp) with pomegranate seeds.
I grabbed a tall Nonfat Cappuccino with caramel on top for my drive in (2 sp). Truth be told, I really wanted the holiday cup lol.My lunch was so good. I used diced tomatoes in chipotle instead of diced tomatoes with green chillies when I made this Kale, Butternut Squash & Sausage Soup yesterday.
The verdict – I loved the subtle smoky spice.I had 1/6 the pot for 3 WWFreestyle Smartpoints with a banana and sparkling water.
I totally planned my day around having a slice of this brown sugar banana bread (7 sp) for my mid afternoon snack. I also had a persimmon too.Our dinner plans changed when The Husband requested BLTAs. I decided to swap out my second slice of bread with a zero point egg for protein staying power.
