Happy Friday Eve all! Yesterday we were up at 4 am to head out for our annual Vegas Vacation. My health goals for this trip are to get as many steps as possible walking everywhere, eat mindfully – stopping when I am full and balancing healthy eats/treats.
I managed to find a pretty decent airport breakfast ordering a side of scrambled eggs with bacon. I actually could only eat 1/2 the eggs. It was good to realize you really can only eat so many eggs.4 am wakeup calls totally call for Starbucks!
Grande iced Nonfat Latte with caramel on top.We stopped for lunch at El Segundo Dol for fish tacos and tableside guacamole. This is one of my favorite places to eat in VegasI feel proud that I kept my chips, salsa and guacamole in check plus ordered the grilled mahi mahi versus beer battered fish.
I devoured all my tacos and left the beans/rice as I was satisfied.After lunch we headed over to the Rampert Farmers Market to stock up on fruit.I totally abused coffee yesterday getting this Iced Coffee at the market. I actually said no to the ice cream vendor to have this – success kinda! Lol…A few snaps of our resort we are staying at…The view from our window.We had dinner at another favorite spot, Bootleggers.
I started with a couple garlic bread bites and house salad.I probably should’ve ordered off their healthy menu but I really wanted the linguine scampi. It was so good and worth it. I am proud of myself for stopping when I was full leaving about 1/3 of the pasta behind.I did have 4 bites of our community cheesecake dessert (split 3 ways).

Looks like a great resort. Do you have a preferred resort you like to stay at or do you change which one you go to each time you visit? I would totally be on board with the kitchen as long as there are grocery stores near by which I could grocery shop at.
p.s. I wouldn’t be surprised if you don’t see this as its a really old post but thought I’d try! 🙂
