Happy Easter Everyone! I actually didn’t plan on taking 3 days off, but, it was really nice to get so many things done and checked off our list.
Like shopping, washing both our cars inside and out, seeing our friends and planting our organic garden for the year!
I totally earned my activity points this weekend ~ I rototilled the soil myself by hand then, planted everything with bird netting on top to keep the cats out…fingers crossed they all grow!
- Sweet Corn (The Husband’s pick ~ should be interesting)
- Crook Neck Squash
- Sweet Banana Peppers
- Lemon Cucumbers
- Sweet 100 Cherry Tomatoes
- Roma Tomatoes
- Then, we still had almost all our herbs from last year growing strong still ! cilantro, lemon thyme, rosemary (it’s huge!) and parsley. I will probably grow a basil plant inside ~ it’s the only place that seems to work for me.
I figured it would be too much to summarize everything I’ve eaten for the last 3 days, so I am just going to highlight some of my favorite things.
BREAKFASTS
Venti Iced Dirty Lattes! (Iced Nonfat, Decaf Latte with 1 pump mocha) (4 points+)
Super Sweet Champagne Mangoes ~ they taste nothing like Christmas Trees
Morning Star Maple Veggie Sausage (2 points+) ~ love these as much as the regular.
SIMPLE LUNCHES
Chicken Potstickers we picked up at Sam’s Club.
Deal ~ SIX for 7 points+
I LOVE how they get crispy on the outside ~ Potstickers are by far one of my favorite foods whether they are homemade or frozen.
Served up with a BIG Spicy Asian Slaw ~ My broccoli carrot slaw topped with 2 Tbps Trader Joe’s Spicy Peanut Vinaigrette and 1 Tbsp Sun Flower Seeds (3 points+).
Panera Pick TWO times TWO (Dinner and Lunch on two different days).
Garden Veggie Soup with Pesto (2 points+)
1/2 Fuji Apple Chicken Salad without stinky cheese (7 points+)
Served up with a nutty Whole Grain Baguette (5 points+)
And the Slow Cooker Chili Cheese Nachos I mentioned on Thursday! I made up a “nacho cheese sauce” melting 1/2 cup FF milk with 4 oz low-fat cream cheese, 4 oz low-fat sharp cheddar and 1/3 cup salsa.
I topped homemade tortilla chips with 1/4 cup “nacho cheese”, 1/4 cup chili, 1/2 oz Low-Fat sharp cheddar, jalapenos, tomatoes, green onions, guacamole & 0% Greek Yogurt. (10 points+)
So good it’s hard to believe they are not bad!

- Carne Asada Tacos
- Spicy Turkey Lettuce Cups

Just want to let you know I made a fruit salad for Easter. Included drained canned, as well as fresh fruits (grapes, apples, strawberries, etc) Folded in unsweeten whipped cream and topped with chopped walnuts. Next time will use less whipped cream (maybe 1 cup to an extra large bowl of fruit salad). Not sure of ‘points’ per serving, but had tons of leftovers. Delicious the next day.

Can’t wait to get our garden planned out for this season. Last year was my 1st garden and it did pretty well. All I had were like 7 tomato plants and red peppers but the peppers did not survive. Boo. I don’t think we’ll try again or maybe just one. We’ll see!
