Happy Monday all! Thanks for sharing all your Fall Must See TV recommendations on my last post. I have to say there are a few shows I totally want to check out…now if only I can find more time in my day. I have so many things I can’t wait to share with you all and a few new recipes like…….Soon!
These Pumpkin Nut Mini’s….
And a spin on the Apple Cinnamon Chip Mini’s with these Gingerbread Bites.
Along with the 4 bean salad and Pulled Pork Goodness. I am shooting on getting caught up this week or at least starting to.
My theme for October, aside from “Breaking out the Pumpkins!” is to focus on getting in my workouts (minimum of 3), moving more every day (park far away, take the stairs), tracking! and weighing/measuring everything. That’s a good starting point ~ everything else is just an added benefit.
I got a head start this morning by hopping on the treadmill and pounding out a 30 minute jog/walk.
Followed up by one delicious Healthy Egg Roll. 5 points+
I couldn’t wait for my morning snack because it included one of the apples we picked up at Apple Hill yesterday….straight from the tree! Oh, plus a Sargento reduced fat Colby stick (2 points+).
We had a welcome lunch today for one of our new co-workers at the big table at The Kitchen Door.
I totally got my pepper fix! I convinced everyone to order these shishito peppers that are sprinkled with sea salt, lime and Korean chili flakes. They are not spicy and you can easily eat the entire bowl ~ promise
For everyone else who thought I was crazy for being so excited over “peppers”, we ordered their fresh herbed flat bread.
Tasty, but, I totally vote for the peppers LOL! 3 points+
Since a few of us wanted everything on the menu, we decided to split two entrees.
My pick ~ the Chilled Vegetable & Rice Noodle Salad ~ it’s packed with seasonal veggies, pickled carrots, rice noodles and topped with this tasty sweet soy dressing and herb salad. 6 points+
My co-workers pick involved Korean Short Ribs and Bacon Fried Rice…she totally had me saying yes at bacon fried rice! It was all just as delicious as it looks. 8 points+ for 1/3 of it.
The Husband completely surprised me tonight by having dinner ready as soon as I walked in the door! I “sawed” down 1/4 of one of the steaks he grilled with sea salt and pepper.
He even measured out 2/3 cup of mac n cheese
Plus the coolest corn I’ve ever eaten! Have you all ever seen purple corn? It tastes just like white corn, but, it’s so fun to eat.
Even the cobb is purple ~ so cool! I’d buy it again just so I can say I ate purple corn
All together ~ 12 points+
Tomorrow is a busy day at the winery, but, am hoping to make it back in time to post.

QUESTION OF THE DAY:
Have you ever bought or eaten a different colored vegetable or fruit? If so, what was it?
Night all!

OMG I can’t believe you had the shishito peppers!! There’s a story here: Last Friday we went to our favorite place on the water, Deck 84…(where I found out my favorite mojitos are 220 cal. EACH)…we decided to have a few apps instead of dinner and the bar tender talks us into “a new little app that is just grilled little peppers”….so we try them…yup, shishito grilled peppers!! So yummy! Can’t wait for your recipes for the mini muffins…since I’m trying myfitnesspal right now, I’m looking for lots of small bites 🙂

Different colored vegetable or fruit – Blood oranges for the first time. There is something so freaky about seeing an orange peel but deep red flesh. Purple peppers. My Sister bought those at a Farmer’s Market, hoping to get her Daughter to eat them since she loves the color purple. Didn’t work so I took them. Purple and yellow carrots. They are soooooo much sweeter than the plain old orange. Black garlic… an acquired taste. Purple potatoes, purple cauliflower, green cauliflower, orange cauliflower, candy cane beets… Really the list is endless, but I have to limit these purchases. The rest of the family is not as adventurous as I am.
