Hi all! My day started so early this morning with a 6 am conference call. I was then out the door with my Tortilla, Pepper & Egg casserole to devour on my way to Seed Business 101. (5 Smartpoints). I actually made sure I had time to grab a Grande nonfat cappuccino with caramel on top for the drive (3 sp). I also feel proud of passing up the pastries at the start and the break.
On my freezing 10 minute walk to class, I snapped a picture of these wild turkeys who were saying Hi to everyone.
I made it to class in time to register with a few minutes to spare. The course is all week long and I am learning so many cool things about seeds.
My fun fact of the day – Do you know how seedless watermelon is made? Watermelon has 32 chromosomes that are in pairs. The 33 chromosome tells it to grow black seeds but it does not as it doesn’t have a match to pair with and therefore does not grow the black seeds.
Our lunches are provided all week and I honestly wasn’t sure what you expect. I came prepared with plenty of snacks just in case but never needed them.
I love that it was like a meal I’d make at home.I filled most of my plate with salad and a little poppyseed dressing. I then estimated about a 1 cup serving of the Turkey Mac. I skipped the roll – it wasn’t special and went back for more salad when everyone else went for cupcakes – success!
I’m estimating 10 sp for my plates.The Husband cracked me up when I asked him what side he wanted with our leftover Bubble Up Chicken Pot Pie.
He said – Salad.
I say is a simple salad with lettuce ok?
He is like what, only lettuce- is that a lazy salad?! Lol…
Me, um…no it’s like a restaurant salad.
So, I “built” a salad with mixed greens, carrots, cabbage, cucumber, bell pepper and pistachios with a homemade vinaigrette. The funny part is I loved this salad and could still eat more salad today.I think this casserole is even better the next day – so worth 10 sp.
