Bacon, avocado, corn, tomatoes, shrimp…. That’s all I need to say, right??#FlashbackFriday with this 30 minute Shrimp Cobb Salad that I am totally making again soon! I plan to lighten it up using this 1 point real deal bacon and recalculating the points.
Happy Friday and long weekend everyone! We had such a delicious dinner tonight that I just had to pop in and share it. Bacon, avocado, corn, tomatoes, shrimp…. That’s all I need to say, right?? This morning The Husband asked for a light Shrimp Salad over lettuce. My first thoughts were a Fajita Shrimp Salad I’ve been wanting to create or this Awesome Weight Watchers Chipotle Shrimp & Corn Salad I’ve made before. The only thing was it was missing lettuce.
After a little perusing, I found what I’m calling the Perfect Shrimp Cobb Salad. Not only does it check off his lettuce & smoky Chipotle shrimp requirements, it has crispy, bacon, creamy avocado, sweet corn and tomatoes all tossed in a fresh lemon vinaigrette.

I picked up these colorful organic cherry tomatoes at Trader Joe’s.
Along with this Apple Wood Smoked Bacon. I freeze the other pieces in packs of 2 or 3 slices for times like this when you need just a few pieces of crispy bacon.
I can only imagine this salad getting better in the summer when tomatoes and fresh corn on the Cobb are at their peak.
Normally I’d say the Shrimp is the best part of any salad. In this salad though, I was digging for big avocado and bacon pieces. I mean…isn’t that why you eat salad – for the “fun” things you get to put in it like this?! Ok, I do…
The vinaigrette involved juicing one lemon and combining it with a little olive oil and mustard. I like it a bit sweeter so I added 1 teaspoon of pure agave syrup.
The shrimp was tossed in smoky paprika and pepper. Then sprinkled with sea salt and lemon when it finished cooking. Next time, I might try it with Old Bay or maybe Taco seasoning.
Tadah…one light, refreshing and seriously good Shrimp Cobb salad that took under 30 minutes to make.
1 serving for me, 3 for The Husband 😀 each serving is 8 Smartpoints. (You get 1/4 of the shrimp & bowl and my plate was like 1/6th!)
