Happy Wednesday all! Last night when I set my alarm and crawled into bed, I was all set to get up early to get a good workout in today. When I set my alarm, I always go through this routine to set the time, then, I flick back & forth to make sure I’ve set it for AM versus PM. Somehow in that process last night, I managed to set my clock 1 hour ahead of when I planned on getting up early. I totally thought my clock was wrong this morning when I looked at it – like, maybe I changed it on accident. So, I got up and checked our kitchen clock ~ nope, I was pretty much up before like anyone in our neighborhood. Too bad I am not someone who can go right back to sleep, I wish!
After sipping some coffee and watching the early AM news, I got The Husband up and we went for a nice long walk. I think the walk woke me up more than the coffee lol.
The ironic part, somehow while getting ready I managed to run out of time so my Simple Start came together in about 5 minutes.
I split this bowl with The Husband ~ 1 banana, 1 mini honey crisp apple & blueberries.
I scrambled two eggs while I cut up the fruit for a little staying power. (SS/SF) – 4 points+.
Another one of my co-workers surprised me today by taking me out to Grace’s Table for a birthday lunch.
I totally want to learn how to make their Homemade Fresh Pickled Veggies. They are so crisp with just the right amount of tang & salt. The best part (SS/SF) – 0 points+. We split this bowl and even ate all the lettuce leaves too
One of my favorite salads to get there is the Roasted Beet Salad and often I will make it a meal by adding grilled chicken. Today I skipped the chicken so I could split an entrée. I counted 2 points+ towards my WPA for the real deal cheese. (SS/SF + 2 WPA) – 4 points+
Avocado, super creamy fromage blanc, mache lettuce, meyer lemon juice, olive oil, maldon salt
Since we both love the Fish Tacos and are following Weight Watchers, we decided it was worth the WPA for their homemade tortillas and split the dish!
It’s probably a good thing I do not know how to make their tortillas.
Grilled halibut, cheddar, black beans, pico de gallo, house made tortillas house slaw with buttermilk-chili-lime dressing
I actually manage to fit this entire 0 points+ container of pico de gallo in my taco so I get a little with each bite.
(SS/SF+4 WPA) – 6 points+ and I can totally check off a healthy dose of Omega-3’s this week!
We also went for an afternoon Power Walk to Starbuck’s to grab afternoon lattes ~ My co-workers/friends are the best!
Grande Iced Nonfat Latte with Caramel drizzled on top (SS/SF) – 3 points+
When I walked in the door, The Husband scored major points! Not only did he have dinner ready, he put together an almost 0 points+ “Anti-Pasti” appetizer snack.
Fun fact ~ you can have 3 olives for 0 points+, Trader Joe’s Marinated Garlic Mushrooms are 0 points+ and so are the sweet pickled cherry peppers & pepperoncini’s.
My “salad” was a homemade caprese salad made with two tomato slices, 3/4 oz. fresh mozzarella, a little sea salt, black pepper, olive oil, balsamic glaze, lemon juice and a sprinkle of fresh basil. (SS/SF + 2 WPA) – 3 points+
Simple Grilled Pork Chops topped with sea salt, black pepper & Jamaican Jerk Seasoning.
(SS/SF) – 4 points+
I love that he doubled up the veggies with a side of steamed green beans.
Did I mention he did the dishes too?! Can it be my birthday week like every week even if just for a day to have my “personal chef” make meals like this & clean up too?!

I was wondering about salad dressing. I can’t find a FF dressing that is shown as a power food. When I start SS/SF, if I scan FF dressings it will take away from my WP’s and I’m not sure that’s right. Is there a certain criteria that it has to fall under?

Hi Abigail,
Any fat free vinaigrette/Italian type dressing counts. Some Catalina’s, blue cheese and creamy dressings count but not all. I also will make my own using oil and vinegar.

I don’t care what he makes, but if I could get Curtis Stone to cook for me…..yup….I do love those Aussies 🙂 Love the caprese salad…I bought some of the BelGioioso already sliced mozzarella and it’s waiting in my fridge for this one 🙂

He’s a keeper!! What a sweetheart. I’d love to have a personal chef just make random healthy meals for me. I’ll eat anything, and I’d love to come home and not have to “think” about what is for dinner, just come home to eat!

oh let’s see . . . . Salmon smoked on cedar planks on the grill, a nice big salad and baked sweet potato – & I’d have the chef come up with some type of awesome 0 point dessert! they can do it, right?! 🙂

Eggs Benedict would be my request from a Chef for the Day. The Riverside Club in Sacramento makes the best eggs benedict for a Sunday brunch.
