Happy Independence Day all! Thanks for sharing what your “Happiness is….” yesterday. It is always fun for me to see how everyone interprets statements like that. One question that came up yesterday with respect to Simply Filling was about my chicken. I really pondered when I looked it up on my Weight Watchers online and it said it was not a Simply Filling Food. In the past when I did CORE, all chicken without skin or breading was included. So, I decided to go back to the list that Weight Watchers has for Simply Filling Foods and you know what……
All chicken except the breaded type is included! So, I am happily taking back my chicken WPA and will just count the WPA for the BBQ Sauce. Thanks Brandi and Tamara!
Yesterday I was rushing out the door so I went with a quick breakfast ~ Oats, cinnamon, fruit and a sprinkle of unsweetened coconut with Green Mountain Iced Coconut Coffee and water on the go.
We had a working lunch yesterday and I actually ended up sharing a bit of my salad when my co-workers were asking if I made the Chickpea, Asparagus & Corn Salad over salad.
I definitely think the color looks best on day one with the bright green, but, the flavors get better the next day as the Rice Wine Vinegar marinates everything together.
The Husband actually helped me back my lunch in the morning and made up this bowl of watermelon, cantaloupe and blueberries ~ it looks so pretty!
Afternoon snack #1 involved a Pluot and Sargento Lite String Cheese.
I always pack extra snacks for days like yesterday when I know I will be working lately. I am glad that I had a Pearine (cross between a pear & nectarine!) and a Fage 0% with Raspberry yogurt on hand. I am pretty sure if I didn’t, I would’ve raided the snack machine and had wasted my WPA.
1 WPA for the Raspberry Jam.
I don’t know why but I thought it was really cool when I opened my yogurt and it had this pattern. I probably need to get out more when things like this make me take a picture
As I was driving home, we were pondering ideas for places we could go to grab dinner and have it be Simply Filling. We also had to factor in that it was almost 9 pm so what would be open.
The Husband picked Panera and I was all over the You Pick 2!
I started with their low-fat vegetarian black bean soup which totally made me think of tacos for some reason.
Then, ordered the BBQ Chicken Salad with the dressing on the side. This salad had enough flavor with the BBQ Sauce, corn, red peppers, poblanos and black beans that I didn’t need it.
2 WPA ~ 1 for the tortilla chips and 1 for the BBQ sauce.
I pondered getting an apple or getting the bread. I really didn’t want another piece of fruit even though the apple would’ve been the Simply Filling Choice.
Since this is my healthy lifestyle, I went with it and got what I wanted it. Totally worth every single WPA I used with a packet of whipped butter. (6 WPA).
Monday’s stats are now updated.
STATS (this is what happens when I sit at my desk for 12 hours working on a project):
- 2,341 calories burned
- 1,929 steps taken
- 9 WPA used, 25 WPA remaining (27 daily points+)
Today I am hopping on the treadmill first thing to “earn” my BBQ tonight!

I started back on Weight Watchers just doing the points but over the past few weeks I started eating more fruits and vegetables when I was near my total points for the day. In the past week, I’ve eaten more fruits and vegetables in one week than I have my whole life which after review looks like I am doing the simply filling plan.
Your meals look awesome. I need to take some tips here and spice up my meals. No pun intended, yes it was lol.
I love the black bean soup at Panera! I could make a meal off that alone, it’s so yummy!

I’ve been an avid reader of your blog and have tried many of your recipes. I have been monitoring my steps and calories burned with a fitbit. I remember you mentioning the Body Media but am curious how accurate you think it is. In your post today, you said you took 1929 steps and burned 2341 calories. I just wonder if my monitor is off because I took over 13,000 steps and didn’t even burn 2000 calories?? Any insight?

Hi Josie,
What I’ve learned is that my steps do not always coordinate with the calories I burn because some steps are more intense than others. For example, if I am running, I will have a bigger calorie burn than if I am just walking around for the day. I also think that each device factors in a persons body mass, weight, height, age, etc. in calculating the calories so our stats would probably never match.
That being said, this was a day I really did sit at my desk all day long working so my steps were really low especially since I did not work out. If you are out and about and not sitting, I would expect your steps to be a lot more than mine.
