Happy Monday all! How was your weekend and day? I am sorry I didn’t have a chance to do a weekend recap and weekly menu yesterday. We had such a fun and busy weekend with an even busier week planned. I cannot wait as the countdown to France is on….but, first, I have so much work to get done this week.
You know you are going to have a good day when you have a 7 am Monday morning meeting (boo!) But, your boss stops by to say, let’s have breakfast after! Much better than the fruit / yogurt I had planned.
I failed at taking a picture of my Crepeville Bacon & Eggs but it looked close to this.
2 eggs over medium, 2 pieces bacon (3 sp), 1 slice sourdough tough (2 sp) and a couple hashbrown bites (2 sp). So good!
On my way back, I got this beautiful tall, nonfat cappuccino with caramel on the foam (2 sp).
I also got spoiled even further with lunch outside in the sunshine at Jack’s Urban Eats.
I only managed 1/2 this salmon salad though as I stopped when full even though my mouth said more #success (4 sp).?
Did you all know you get 13 Trader Joe’s Peanut Butter Pretzels for 5 sp? Honestly my favorite new snack as it’s the perfect amount.
I had that with a handful of the cherries we picked this weekend (yep, that’s 13 lbs of zero point snackin’!)
Last night, I put together this Slow Cooker Turkey Sausage, Red Beans & Rice recipe so all I had to do this morning was add water and turn it on.
I quick soaked the beans for an hour and chopped the veggies.
Add the sausage plus herbs, hot sauce, 1 tsp Cajun seasoning, 2 tsp sugar and water then cook on low for 10 hours.
One cup = 4 WWFreestyle Smartpoints and served up with 1/2 cup Trader Joe’s Jasmine Rice (7 sp).
I love that the beans pick up the smoke from the sausage, you get hints of Cajun spice and then all that tasty, herby broth soaked rice.
