Slow Cooker Steel Cut Oats w/Peaches & Blueberries

Here is one of my favorite cold weather breakfasts that warms you up from the inside out for this week’s Flashback Friday. Are you surprised it’s not eggs?! During cold winter mornings, I LOVE making up a big batch of Crock Pot Steel Cut Oats. Steel Cut Oats are My FAVORITE type of oat because they are completely unrefined and they have such a chewy texture that almost “pops” in your mouth.  I am pretty sure once you try REAL Steel Cut Oats (NOT the Quick Cooking Kind), it will be hard for you to go back to regular or instant oatmeal.

This recipe is so easy to make ~ feel free to mix and match with any of your favorite fruit combinations (apples/raisins, pumpkin, cranberry/orange).  Simply put everything in the slow cooker and you wake to a big pot of super creamy, fruity, steel cut oats.

Did I mention that this recipe is made up of 100% Power Foods and fits into the Simply Filling Plan too?!

CROCKPOT STEEL CUT OATS WITH PEACHES & BLUEBERRIES

INGREDIENTS:

  • 3 cups steel cut oats (I used Trader Joe’s)
  • 1/4 cup ground flax seeds, optional
  • 8 cups water
  • 2 Cinnamon Sticks
  • 1 Tbsp Pure Vanilla Extract
  • Pinch of Salt, optional
  • 1 lb frozen peaches
  • 1-2 cups frozen blueberries

INSTRUCTIONS:

1.  Spray your crock pot with nonstick spray or use a crock pot liner.  DO NOT SKIP this step you will be scrubbing for days.

2.  Combine all the ingredients in your crock pot and cook on low for 8 hours.

3.  Remove cinnamon sticks.  Serve with your favorite toppings.  I LOVE making this into a dessert and using brown sugar, whipped butter and coconut.

Makes 10 cups, 4 smartpoints or points+ per cup, add points+ for any toppers

I didn’t really do any step by steps for this recipe.  I fill my crock pot to the brim and all the fruit rises at it cooks over night.

Once you mix it all up, it looks like delicious oats with firm fruit.  It freezes AWESOME too, just be sure to portion into 1 cup containers.  A little water might be needed when heating.

I made a BIG 6 points+ bowl of comfort ~ topped with 1/2 Tbsp Whipped Butter, 1 Tbsp Brown Sugar and a sprinkle of unsweetened organic coconut.

MELTED brown sugar + whipped butter = CARAMEL ~ this tastes just like BLUEBERRY PEACH COBBLER in every bite if you don’t mix it up!

Just another one of my FAVORITE recipes from the archives.  I have a feeling I am making this soon since The Husband asked why he didn’t get any of THAT oatmeal this morning when he saw my typing up this post Smile

    OK YUMMM!! I need some frozen fruit …. I will get some tomorrow…are you using the light whipped butter? I can’t find it anymore..Iam hungry now and it’s 10pm…LOL.

      Josie,

      I used regular Whipped Butter ~ 1 Tbsp is 2 points+. I like it better than the light because it actually tastes like real butter for less points+.

      I use a 5 quart crock pot which I believe is the standard size?

    this looks sooo good! i would love to make a big batch on a sunday and have breakfast all week! i usually cook my oats in the microwave when i get to work, but this is even better, esp since i do love steel cut oats!

    I have an incredibly dumb question. You topped your oatmeal with a teaspon of whipped butter. How do you measure it? I have such a hard time trying to figure out how much butter I’m actually using.

      Hi Emily,

      You can measure in two ways ~ using measuring spoons or your food scale for the grams per serving. It depends on how much time I have but I have used both methods.

    Thanks for this recipe!! I made it last night & just finished eating it. It was AWESOME!! I topped mine with 1tsp of splenda brown sugar. Will definitely be trying it with the whipped butter on my next round. Also, I have a 4qt crockpot and it fit.

    Just starting my switch to steel-cut oatmeal and since my two all time favorite fruits are blueberries and peaches, this is a must try recipe. I don’t usually buy cinnamon sticks, how much ground cinnamon would you suggest as a substitute?

      I would use 1-2 tsps ground cinnamon give/take depending on how much you like the cinnamon flavor.

      Hi Karina,

      I have found unsweetened coconut in the health food section at my local grocery store and at whole foods. It comes in a green/white bag and it is called Let’s Do Coconut.

    I just made it and the oatmeal is a light purple color because of the frozen blueberries. I noticed that in your pictures your oatmeal not that color! Did you use fresh blueberries?

      I usually use frozen blueberries but have used fresh as well. I do get the blue color more when I use frozen. Hopefully you enjoyed the oatmeal even with it’s pretty purple color 🙂
