Happy Hump Day all!  Thanks for all the tweets, facebook messages and comments about my recipe being published.  It’s pretty cool to me and kind of a big deal for Danica’s Daily LOL.  It makes it even better that you all are excited with me.  The Cookbook giveaway will be coming up soon to share in the fun!

Pre ~ workout I snacked on a banana then took the train and walked to work.  Once there, I PUSHED myself on the Elliptical for 30 minutes treating it like I would a spin class with hills, going as fast as I could, pedaling backwards and of course no hands.

I was surprisingly not hungry until 3 hours later. Since I am focusing on INTUITIVELY eating when my body says it’s hungry, I waited and had breakfast at 10 am.

Taco Egg Muffins ~ I NEVER get tired of them and am glad I froze a few (5 points+)

Lunch today involved my new Chipotle Flour Tortillas and Spicy Black Bean with Chipotle Harissa Hummus!

* 1 Chipotle Flour Tortilla (totally worth 4 points+) ~ thick, doughy, chewy, spicy, good!

* 2 tbsp spicy black bean hummus (1 points+)

* 2 oz Lean Ham and 1 oz Lean Turkey (3 points+)

* 1 slice Jarlsberg Lite Swiss Cheese (1 points+)

* Organic Mixed Greens

Side of pickles!

The BEST WAY to enjoy this spicy hummus wrap…. take 1 bite of the wrap then 1 bite of the pickle!

Huge pile of Organic Mixed Greens topped with 1 Tbsp dried cranberries, 3 candied walnuts and 2 Tbsp TJ’s LF Spicy Peanut Vinaigrette (4 points+)

I LOVE it when you finish lunch and you think ~ WOW, that was awesome and I am totally FULL!

Snacks for the train ride home (1 points+)

Tonight, I had a BIG craving and it looked a little something like this.

The SECRET INGREDIENT that makes THESE HEALTHY NACHOS awesome is BAKED Extra Thin Mission Tortilla Chips topped with sea salt.

The Husband kept thanking me for the AWESOME Basketball food (He thought I made it for the game….I might have let him just go with that Winking smile) (11 points+)

I am feeling a little snacky/hungry so I think I am going to have The Husband peel an orange or two to share for dessert.

OHHHH ~ For those wondering about this week’s Wordless Wednesday.  The Husband accidentally made that flower when he was sharpening his pencil for work and sent it to me…..LOVE!

    That Jay is such a hopelessly romantic kind of guy – he’s a keeper! Isn’t it wonderful having all this fresh fruit to end your meals? We’ve really been amazed how a few bites of fresh fruit help your mouth feel satisfied when your belly already is.

    I love making my own tortilla chips! So easy and they taste so much better! I haven’t been able to find the Mission brand, but I do use a brand that gives you 2 tortillas for 2 PP! Makes a nice pile of chips !

    Thank you so much for stating you freeze the taco egg muffins! I’ve been dying to try them but as a single person, that’s a lot of food to make at once. But freezing is what I do! Can’t wait to make them now. THANK YOU!

    Hey Dannica… I also do not like my hands to smell like orange or orange peel all day…but I do LOVE oranges. To solve my orange dilemma I cut the top and bottom off of the orange, slice it in two, and then slice each half in thin slices. They are easy to eat this way, you don’t have the orange hand issue, and they are very portable! So great that your hubby peels yours for you…I might ask mine one day…just to see what he says…:)

    I am moving this week to a new place, and your blog has inspired me to get a freezer!! So…I went out and ordered a little 5.3 cu.ft freezer today. Now I will finally have a place for all the good deals, and for the extra servings that I cannot possibly eat at once! I have hesitated making so many recipes because of lack of freezer space.

    Ok, I guess I’m the only person who had no clue what the Wordless Wednesday pic was. LOL I thought it was a pretty “flower,” but I kept trying to figure out what that weird thing was he was holding it with and why it had no stemp. ROFL I feel so enlightened. Love your blog!
