Spicy Peanut Coconut Shrimp Salad, 8 points+

Happy Friday all!!!  This morning was definitely a Starbuck’s morning.

THREE of my FAVORITE WAYS to lighten up My Starbuck’s Drink include….

1.  Get Fat Free Milk ~ saves 1+ points+

2. Get it iced ~ saves 2-3 points+

3. Reduce your # of pumps…each pump of Mocha is 1 Points+, so you could save several points+ not having the usual 5 pumps added to a grande

But, really, when you walk in….just order a DIRTY LATTE like this

Grande Fat Free Decaf, Nonfat Latte with 1 Pump Mocha (4 points+)

What is a dirty latte

Can someone tell me why my Starbuck’s STILL uses the Christmas Cups? They are fun, but, I am wondering if they are now just ahead of the game for Valentine’s day Smile

I didn’t really want anything for breakfast but I knew I NEEDED to eat something. 

Orowheat Double Fiber English Muffin with 1 Tbsp Whipped Butter (5 points+)

We had a working lunch today at work and we ordered TR2 (again!) I pretty much can NEVER pass up their delicious shredded chicken.  I decided to venture out and order their Chicken Burrito for a change and it was AMAZING.  There honestly is just something to be said about a REAL flour tortilla, REAL CHEESE, rice and chicken ~ LOVE!

They do not have nutritional information so I went on the high side and estimated all the ingredients in the burrito (tortilla, rice, beans, cheese, chicken, salsa) ~ 14 points+ estimate.

I actually cut it in half with “thoughts” I’d only eat half…but, I ate every delicious bite and I’d do it all over again….AMAZING even though the picture doesn’t show it.

Dinner tonight was a NEW TO ME WEIGHT WATCHER RECIPE!!!  I have been wanting to make THIS COCONUT SHRIMP RECIPE ever since I saw it in the Weight Watchers Weekly Meeting handout.

I pretty much followed the recipe, but, made a few changes (click HERE to get the recipe):

* I used half coconut & half panko bread crumbs to make it crunchier & less sweet

* I added crushed red pepper flakes to add some heat to the sweet

I was really intrigued by this recipe because the “batter” includes flour, baking soda, BEER, and sea salt (I added black pepper too).

Make sure pat your shrimp dry with paper towels to help them get crispy, not soggy when they cook.

Organic Shrimp

After prepping all my ingredients, I set up a “dipping” station assemble line.

Assembly Line

Dip it & shake it in flour.

Dip it

Dunk it and shake the excess “beer batter” mix off.

Beer Batter

Roll it and press it in the coconut mix.

Coconut Panko Topping

Place on a cookie sheet and spray with nonstick cooking spray to help it get crispy.

Weight Watchers Shrimp Recipes

Repeat a bazillion times then, bake at 450 for 10-12 minutes or until the shrimp are cooked through & crispy like.

How to make coconut shrimp

I totally pick the BIGGEST SHRIMP on the tray to make sure I got the most for my 6 points+ (4 shrimp are in a serving.)

Recipe Renovation

Served over mixed greens and drizzle with the BEST DRESSING EVER ~ 2 Tbsp Trader Joe’s Spicy Peanut Vinaigrette (8 points+ for my entire Spicy Peanut Coconut Shrimp Salad)

These might just be better than the REAL DEAL…..you definitely need a good dressing or a sweet & spicy chili dipping sauce to bring make out the flavor of the shrimp.

What is your FAVORITE drink order at Starbuck’s or Pete’s coffee?

I have 3 favorites ~ a Dirty Latte (above, hot or iced ~ it’s just like chocolate milk), a regular latte with caramel sauce drizzled on top (it makes it like a marshmallow) and occasionally a Chai Tea Latte (hot only, iced is weird to me).

    I have never bought a Starbucks coffee, but I have bought their bottles of Sugar Free Syrup to use at home. I don’t have a bottle of it in the house, so I can’t look at it. I take it the Mocha pump isn’t sugar free or if it is, there’s something that makes it 1 pt+ ???

    Do you ever make coffee at home? What do you use? If I want a special treat, I’ll use the SF flavored syrups. Davini makes yummy ones that they have at TJMaxx and Marshalls sometimes.

    The shrimp looks delicious!

    Your dinner looks so delicious!! I am going to have to try it! I love love love shrimp 😉 and coconut!!!! THe best of both worlds!!!

    I love burritos and if I get the chance I will eat every ounce of it and not even worry!!! I mean we can all have a non clean meal 😉

    My favorite coffee from starbucks that I usually order, is a cafe misto with soy milk and 2 pumps of sugar free hazelnut 😉

    I usually order a double short, skim, no foam, extra hot latte! …and I have to say it in that order or I get all mixed up!! : ) Can’t wait to try the shrimp!

    Thanks to your site I went to my Trader Joes in NE last night looking for the Spicy Peanut Sauce… there was none on the shelf and the worker who checked the computer for me told me it was being discontinued?? Could it be true? Love your site and your posts. Venti Nonfat Latte for me!

    You know, when I first saw this coconut shrimp recipe on the WW website, I wasn’t all that interested. However, your post just made it look WAY more appealing- I’ll have to try it out!

    I love the Nonfat Chai Tea Latte from Starbucks!!! I get one every once in awhile before work but I have to chug it and hide the cup under my car seat because I work for Dunkin’ Donuts. Some things are SO worth being a traitor for!

    Hi Mo,

    You know, the Mocha I get at Starbuck’s is not sugar free. I will say though that with the new points+ program, the sugar alcohols in the sugar free syrups do equal points+ – I think it is like 3 pumps before it’s a point+ or something with the sugar free ones.

    i do make coffee at home every day and drink it black most days. Sometimes I go through phases of making my own using Trader Joe’s Organic Midnight Moo Chocolate with FF milk and have it iced. Other times I use FF milk and ice with agave or caramel sauce.

    I gave up all sugar free sweeteners 4 years ago because I used them way too much, they gave me headaches and it made me crave sugar alot. But, I did love the DaVinchi ones 🙂

    Hi Kelly,

    Believe it or not the ICED Lattes are the lowest in points+. Hot lattes are even more. Mine has so many because it is the VENTI – BIGGEST SIZE – 24 oz for 3 points+ plus 1 point+ for the mocha. It’s 100% worth it to me since it’s like having a big glass of chocolate milk and it helps me get in a dairy.

    Hi Julie,

    My Trader Joe’s had a bunch of them in stock so they better not be discontinuing it! I NEED to ask. I know that they had it out of stock for a bit because of the cilantro scare that was going around. Not sure if that helps, but, I’d say try back again and ask someone else to see if you get the same response. I know that it changes from time to time depending on who I ask. I will let you know if I find anything out.

    We made the shrimp last night, and they were great. You’ll be interested to know you can sub Diet Ginger Ale for the beer (don’t ask me how we were out of beer), but subbing unsweetened coconut was not the greatest idea. I just used the coconut we had on hand, which was unsweetened. Still pretty awesome though!
