Hi all! Today I kicked up my workout a notch moving on to C25K 4.1 and Jillian Michael’s Body Revolution. The super cool part that I realized is that it wasn’t that hard to jog longer and I jogged 16 minutes total in between my walking breaks.
I could’ve picked anything for breakfast that I wanted because The Husband was having cinnamon rolls. The funny thing….I still wanted eggs lol.
2 egg scramble with 1 slice butter bread topped with 1/2 Tbsp whipped butter – 3 sp.I was really craving Shrimp & Asparagus with Black Bean sauce for lunch. Luckily I had everything on hand to whip up a quick stirfry.
Served up on 1/2 cup Trader Joe’s Organic Brown Rice for 7 Smartpoints.My zero point mid afternoon snacks. A perfectly hard boiled egg…and banana berries.Do you all remember this Weight Watchers Fifteen Minute Meals magazine? I bought it just so I could make this Spinach & Ravioli Lasagna.

What I can say is this casserole is so easy to make. Just four ingredients that get layered up and baked together.
- Two 9 oz packages Buitoni four cheese ravioli
- 1 jar Trader Joe’s Arrabiata sauce
- 8 oz Trader Joe’s Lite shredded mozzarella
- 1 lb frozen spinach, thawed & squeezed dry
We both loved it although The Husband did say less green stuff and more cheese lol. I told him the green stuff is what gives him muscles like Popeye 🙂
